Today we had another cup of Takaten sake recommended by a local senior 😋.

I am researching Suwa sake in cups and small bottles 🫡I can't have a lunchtime drink during the weekdays, but I am looking forward to drinking and visiting gourmet restaurants on my days off 😚.
I purchased this product after it was recommended to me by a liquor store in Nagano Prefecture. He said that Takaten is not often released outside of the prefecture and is becoming quite popular in Nagano Prefecture. It seems that most of them are dry, but I bought it because I was told that it was one of the most gorgeous, sweet and easy to drink.
When I drank it...
I felt fruity for a moment on the palate, but the bitterness and spiciness came soon after. The astringent taste also lingered on my tongue for a long time in the aftertaste.
It was a little too much for me.
It was a complex flavor, so I wonder if it would be a hit for those who like it?

Shinshu Spring Color SAKE Festival.
Food tents were set up around the festival. The kushiyaki skewers looked delicious, but I had just eaten lunch, so I concentrated on drinking.

We love tasting and brewery events, so we came again this time 🤣.
This time, I arrived 20 minutes after the doors opened. 🏃♂️
We started with "Takaten" which is rarely available in Kansai.
The sake is "round and slippery" (it goes down your throat smoothly).
Takaten is a sake brewery run by a brother and sister.
The younger sister, Emi Takahashi, is the toji (master brewer) and the older brother is in charge of sales.
It was the older brother who handled the business. He originally attended Osaka University of Arts and did not expect to help out at the brewery.
He has many acquaintances in Osaka and he wants Takaten to be known more widely 😊.
Takaten Junmai Ginjo
Sleek, clean, and round junginshu.
Takaten on the rocks.
It can be served on the rocks with more than 18% alcohol by volume, but it doesn't give a strong impact.
Takaten Junmai Dry
Slightly dry, with a Sake meter of about +5. It has a sharp taste and is not too spicy.
Takaten Kinmon 59 Junmai Dry
Slightly spicy, but has a nice flavor and a sharp finish.
Takaten Kinmon 39 Junmai Daiginjo
It has a gorgeous aroma, a full flavor, and a clear mouthfeel. The price is reasonable 🤣.
They seem to make 700 koku and I wish they would make more in the Kansai area 😊.

This is a commemorative sake for the 100th anniversary of Jizakeya Miyajima, a sake store in Shinshu. This is the 100th anniversary commemorative package of Jizuya Miyajima, a sake shop in Shinshu, featuring 7 sakes brewed by a female toji in Shinshu.
The fifth of these is "Koten" (高天).
This sake is brewed by Mie Takahashi, the toji of Koten Sake Brewery.
Sorry, I had never heard of Kouten before😅.
Takaten Shuzo was founded in the Meiji era.
The brand name "Kouten" is derived from the brewer's ancestor's family name "Kouten Ryohashi Zenshimon" (高天良橋禅定門).
It was the first brewery in Nagano Prefecture to win the honorary award at the National Sake Competition in 1928, and is a historical brewery that laid the foundation for Shinshu sake.
The ideal sake is "round and slippery.
Slippery" means "slipping down the throat" in the Suwa dialect.
Mie Takahashi is the Suwa Toji, and her husband is the brewery president.
Ninety percent of the sake produced is consumed locally, and only 10 percent is shipped out of the prefecture.
That's why you don't see them around.
This sake has a fruity aroma.
It has a gentle fruity aroma.
The fruity sweetness is balanced by a dry acidity.
The umami underpins the flavor, and the hints and aftertaste are quite koji-like, giving it a unique taste.
The strength of the rice and koji can be felt in this sake 🌾.
