The sweetness is a bit floral but reserved. The umami is full-bodied. It is slightly light with a lingering dry bitterness. A perfect food sake.
Last year, I recognized that it was disappointing that I did not feel the richness, but this year I feel it is delicious.
I had the seasonal Stamina Motsu Ramen. I wonder if the burdock tempura is disturbing. I'm going back to the special miso.

The second bottle for July in the Shinshu Secret Sake Hanpukai 2025 Gold Course is from Takaten. The challenge of this first take is that both are a cross between Yamae-Nishiki and Hitogokochi, both produced in Nagano Prefecture, and both use Alps yeast.
The specs are: sake degree ±0, acidity 1.3, and alcohol 15.5.
It has a fresh, honey-apple-like top aroma and a soft mouthfeel. The mild sweetness and refreshing acidity gradually spread the umami taste, and the aftertaste is clean and crisp.
The light and refreshing flavor was a good match with simmered squid and daikon radish!

Soft and sweet aroma. Full of rice aroma and flavor. Tongue tingling. Slightly dry, rice-based sake. Delicious. When ice is added, the sweetness appears and the sharpness increases. You can gobble it down. Takaten is amazing.
We bought it at a supermarket near the Takaten Sake Brewery. There is a huge selection of sake from Okaya and Suwa.
Takaten has had a sake called "Rock" for quite some time, which is recommended to be mixed with ice and watered down, and they added this to their lineup about 5 years ago in response to the high demand for junmai sake.
It is dry but has good sweetness and acidity, and is delicious with a good balance!
It has a strong umami flavor, but it's smooth and not tiring to drink, so it's good on its own or in combination with other wines!

Gentle aroma like white grapes.
It has a gentle sweetness and flavor, and is pleasant to drink. Slightly sweet and gentle taste. The lingering aftertaste is also moderately pleasant 😊.

Quite nice aroma, like fresh fruit. Sticky and alcohol-derived numbness on the tongue. A bit of bitterness stands out.
When ice is added, it transforms into a sweet, soft, and refreshing taste. A great sake that can be drunk endlessly when paired with a meal. Umeyesu. Perfect for summer.
Takaten recommends high alcohol content sakes, including this one, to be drunk on the rocks. The locals also serve regular sake on the rocks, though.
