I like this sake and have repeated it several times.
The aroma is subdued, but there is definitely a nutty aroma derived from the natural yeast yeast. In the mouth, lactic acidity and gentle sweetness balance each other and give a smooth impression, but the citric acidity from Byakuya sticks to the side of the tongue and leaves a strange aftertaste. Combined with the soft, fresh yeast yeastiness, it is a technical, modern "umakuchi dry" sake.
It is a unique sake that is very technical, yet seriously tasty.
Pairing: Salted grilled chicken, octopus sashimi, vinegared pork, ponzu dishes, wild vegetable tempura, hamburgers, etc.

There are many sake that are said to taste like apple, but this is truly apple juice.
It has the fruitiness, acidity, sweetness, and slightly acidic taste of apples.
To be honest, if someone were to serve this to you, you would probably mistake it for a fresh-squeezed apple sour.

It has a miraculous balance of the rich koji taste typical of Tsuchida and the crisp, traditional sake-like dryness without being unpleasant.

This is the third collaboration between Tsuchida and UNITED ARROWS.
It seems to be a collaboration between Tsuchida and UNITED ARROWS, and is full of fascinating meta information: 99% koji, pure rice, active nigori raw sake, and No. 6 yeast 😊.
It's called "active" but has air holes, so it's quiet when you open the bottle, as if it's lost its schwarziness. It's hard to tell if the bubbles are small or not, but let's drink it from the top first.
The aroma is 99% koji, which means it has a brown ricey flavor and a lactic acidity that is quite fermented. The taste has a strong sourness that is stimulating, like popsicles, and a refreshing wild grass and citrus flavor.
When the lees are mixed, the flavor of the rice and the roundness of the flavor come out and the overall balance improves.
I personally like the taste of this wine because it is made by a natural old-fashioned method.
But in terms of general acceptance, it is too edgy, which is typical of Tsuchida 😇.

AAJI The reason for this purchase was the "rice shortage" that is making a fuss this year, and "Hatsushibori" seems to be made every year, but it might be a special sake, so I was excited to pay for it because it might be a memory, even though it was about twice the normal price when shipping was included. The sake is made from raw yeast without "yellow koji for shochu" or "white koji for shochu," and uses "non-standard rice hulls that are not distributed in the market. We challenged ourselves to see if we could still make a delicious sake. The melon-like aroma is quite strong. It reminds us of the spiciness of shochu (rice malt for shochu). The aftertaste is rich like old sake. I would like to drink a regular "Hatsushibori" someday.
