ひざあき
It is quite light, as is typical of Hokkaido sake. When rolling it around, you can also sense the strength of its umami. It is quite easy to drink, with little bitterness and other unpleasant tastes. If you want to match it with food, it would be better to drink it sparingly; after the second day, the umami seems to come out a little stronger, so you may want to drink it with something stronger.

ひざあき
It is a junmai ginjo, but the ginjo aroma is subdued and it is dry with a strong umami flavor. It also has a slightly bitter taste. The second day, the bitterness recedes a little, so it is easy to drink, but it would be better to taste the freshness of the first day.

ひざあき
Moderate acidity derived from lactic acid. After the second day, the acidity becomes milder and the umami flavor emerges. The bitterness is also combined to give a sense of satisfaction.

ひざあき
Yellowish color like white wine Excellent as a food wine due to the synergy of acidity and umami. The alcohol content is 16%, so it is a little strong, but the alcohol feeling is not that strong and it is delicious.

ひざあき
It is slightly spicy due to its acidity and high alcohol content, but also has a strong rice flavor. It goes well with fried food and other strong flavors. It is pleasantly intoxicating for everyday use (if you can find a place to buy it). Purchase at Watanabe Sake Shop in Palu, Kitakami.

ひざあき
Hard, mineral flavor. Bitter aftertaste. Slightly carbonated. Dry and crisp. Little ginjo aroma and little fruitiness. Dry sake with no playfulness. It may not be modern, but it is delicious.
