The slight gaseous sensation...you can taste a refreshing sensation that is hard to believe it is 80% polished rice.
The rare and valuable Aizan rice, which is called the diamond of sake rice, gives it a sweet and juicy taste.
This is a product that shows the potential for future sake without blaming the sake rice.
Alcohol content 17
Raw material rice: 100% Nara Prefecture dewy leaf wind

Remarks: Unfiltered, unpasteurized, unpasteurized sake
The latest trend is said to be low refining and a gaseous taste. However, the coexistence of low whiteness, which makes fermentation extremely difficult, and gaseousness, which is a proof of active fermentation, is... There it is, Kaze no Mori!
Let's go! The aroma is very gorgeous and sweet. The aroma is very sweet and floral, reminiscent of apples and pineapples. The water itself is sharp and hard, and the crispness of the gas envelopes it. The taste is a complex intertwining of sourness and astringency derived from the gassy sensation. There is a rich sweetness and a dewy-leaf style flavor hidden in it. The complex and rich taste, which is neither the fruity type that is popular nor the light and dry type that is only possible with sake, can only be produced by Kaze no Mori, a low-polished sake full of gas. It is truly a sake of the new era. Thank you again for the sake!
Mmmm, delicious!
The sweetness is much stronger than usual Kaze no Mori, especially at the entrance.
If you say it has a white malted rice-like citrusiness, well, that's true, but the acidity is not as assertive as I thought it would be (probably because I'm comparing it to Flax Cat, but...).
The umami is well asserted and the balance is really good.
The lingering aftertaste is more subdued than the standard, but again pleasant, as is typical of Kaze no Mori.
Higher rating than 🐱.

Lingering Sourness, gentle sweetness, and a numbing feeling of alcohol linger. The aftertaste is long.
Impression: Fruity, medium dry
The aroma is fruity.
The taste is also fruity with moderate sweetness and strong acidity.
There seems to be a lot of talk about comparing the old version of 657 with the new version.
It is hard to say because of the difference in condition, but I think the next version is more fruity. I think I like this one better because it has less koji smell.
Kaze no Mori is good because it clearly shows the individuality of the brewery.
The downside is that it is rather complete on its own, so you have to worry about what to eat with it.

I caught a cold last week and had to take a forced rest day 😵I went back to Ishikawa for the weekend and chose the first bottle to return from the fridge 😋I opened a bottle of Wind Forest as I was sick with a cold 😀 I remember I bought it from a liquor store in Yamanashi.
When I opened the bottle, I heard a gaseous sound 🤩I took a sip and found a refreshing Muscat-like mouthfeel with a slight effervescence typical of Kaze no Mori 😍It has a beautiful umami and sweetness that spreads out and a mild acidity, making it a delicious sake with a refreshing and well-balanced taste 😚👍.
Good evening, Maecin-san!
I understand you had a cold🍀.
I'm glad you've recovered to the point where you can drink ✨.
It's good that you can drink the fresh and refreshing Kaze no Mori after your illness 😋.
Good morning, ma-ki- 🌅😀😀
With my runny nose and sneezing, I thought I finally had hay fever, but it was a cold 🤣It was a very gentle wind forest after my illness: ☺️
The first impression when drinking it is that it has a fresher white peach-like aroma than Akitsuho 657, and it also has acidity and dryness, but with a more gorgeous sweetness. The aftertaste is rounded out by a clear, refreshing bitterness.
It is also delicious.
My favorite degree (self-assessment)
★★★★★★★☆☆☆☆
Very tasty.
Prince melon, whey and cream, fine alcohol and incense aromas.
Fine microbubbles and silky mouthfeel. Fresh acidity, gorgeous sweetness. Fresh and unctuous flavor, strict bitterness.
Match with cucumber marinated in malted rice, Corporal hot tofu, sea bream sashimi, shrimp cocktail, Caesar salad, and grilled vegetables.
