It has been a long time since I have had "Kaze no Mori".
Up until a year ago, I lived in Izumisano, so it was easy to get some sake from Wakayama, but now it is not so easy.
Only 657 after a long time, I was even impressed by its taste. It is the standard and the strongest of Kaze no Mori. It brings me a moment of bliss, and I am honestly happy.
I want to drink it again.
It is slightly effervescent and has a very fruity and sweet taste in the mouth, but the aftertaste is refreshing and easy to drink.
It has a good flavor, so although it is refreshing, it has a nice aroma and is not lacking!
I think the taste will change after a few days after opening the bottle, but I don't know because I have already drank all of it.
It's been a while since I've been to Kaze no Mori.
This is the first time for me to heat sake.
I didn't have any special equipment.
I warmed it up just as I saw fit.
I put the cup in a pot of boiling water and heated it.
It was probably about 35 degrees Celsius. There was a sticker on it that changed color.
I took out the cup and sipped it.
My image of heated sake is Aki Yashiro's Funauta.
It was like, "If you drink it deeply, you will feel it deeply..." But I drank it without hesitation.
The aroma is nice.
The fruity flavor of Kaze no Mori is the same.
Although I did not prepare it, I thought it would be good with grilled squid as a side dish.
The flavor was very clean and spread nicely on the palate with no cloying taste.
The aftertaste is also very refreshing.
I thought it was very tasty!
I also had it with cold sake.
This is the usual Kaze no Mori.
This is the first time for me to taste a kijoshu.
I felt like there was a lingering aftertaste after drinking it.

The color is yellow, low in alcohol, but full-bodied, so it is very drinkable and matches well with warming up.

The aroma is not as mellow and delicate as usual.

Sourness and complexity, typical of the Bodhi yeast and Kaze no Mori's ALPHA series, come together at once!
At the same time, it also has a freshness.
The sweetness and umami, perhaps derived from kijo sake, is not too strong, but it is stronger than the original Kaze no Mori Akitsuho with a light aftertaste.

When my child went back home, I opened a bottle of Kaze no Mori's limited edition "ALPHA1 DRY", which is the only dry sake from Kaze no Mori, and its theme is "the key to the next chapter". As the theme suggests, the aroma and taste reminded me of the beginning of a new story spun by Kaze no Mori.
