Kaze no Mori I have always loved it.
How many bottles of Omachi, Aizan Junmai Ginjo Junmai Daiginjo, etc. have I had?
I've been away from it for a while since they started using low milled rice such as 80 a few years ago in pursuit of more complex flavors, but I'm going back to where I started,
Let's start with alpha1👍
Alcohol 13%.
Aroma of apple and fizziness typical of Kaze no Mori.
Akitsuho with 70% polished rice.
It has little bitterness. Delicious!
I participated in the seminar at Kaze no Mori WEEKS again after consuming the ticket I received at the seminar.
Fruity sweetness and refreshing acidity
This 80% low-polishing sake is made from 100% Omachi!
You can directly taste the sweetness characteristic of Omachi...and the refreshing aftertaste is even more refreshing, making it hard to believe that it is a low-polishing sake.

100% dewy leaf wind...20 year old "firebird" rice shochu is added...no label attached because it is not yet on the market.
The taste is quite sweet, like ripe fruit.
The taste of banana lingers in the throat...is it because of the addition of shochu? ...Various tastes are intertwined in a variety...Moreover, it is like a very easy-to-drink kijoshu, and as the name suggests, it is one of the sakes we will be aiming for in the future...?

Aged for three years, it is a concentrated and very dark sake.
You can also taste the sweetness of a medicinal sake with the pungency characteristic of aging.
All in all...a unique sake!

Zarukuri-gatakuri (roughly transliterated as "colander picking")...a special sake made using Kaze no Mori's unique technique...with a submerged screen and without pressurization or oxygen!
Because it is not exposed to air and is not oxidized... you can taste the sweetness of the finest quality.
The spiciness and bitterness...are also supported by the best sake.

I had my first glass of Kaze no Mori Yamadanishiki 807 at eureka in Nishi-Azabu and have been wanting to try the alpha 6 ever since.
I'm glad it's available in Melbourne 😌✨️
Paired with Tasmanian Kumotan for a bit of luxury ❗☺️
Aroma like blue melon, gentle sweetness and acidity.
The message is "The door to the next chapter"...100% Akitsuho rice, 70% milled rice, aged in ice temperature!
It is very slightly carbonated...and you can feel the deliciousness of the spiciness and bitterness...pushing from the back of the supple sweetness.

The gorgeous sweet aroma and taste are enhanced. The taste...passes down the throat with a slight spiciness that pleasantly and smoothly stimulates the palate.
At Kaze no Mori WEEKS 2025, Osaka, Japan
The spiciness envelops the sweetness, and after the spiciness dissolves, the sweetness spreads out at once.
The sweetness clings to your throat and keeps you satisfied until the very end.

The mildly spicy taste is pleasant to drink...but then...the sweetness and spiciness spread further and melt into your mouth.

No acidity...sweetness runs through the mouth. After that...a slightly heavy bitterness boosts the taste sensation.

No acidity....a wonderful harmony of sweetness and slight spiciness, and a gentle drinking experience down the throat.
