Yes, it is a stable taste. This is the sake that I consider to be the best sake in the world. It is no exaggeration to say that I look for my favorite sake based on this.
It is probably one of the sweetest sake in Japan. However, it is not too sweet, and the umami of rice, which is typical of sake, is expressed well. The sweetness is reminiscent of bananas in the umami lineage.
Kobe Shu-shin-kan is an absolute must for those who visit sake breweries in Kobe.

We enjoyed sake soba and junmai kizukizake set at Sakabayashi, which is attached to a sake brewery.
I prefer the junmai ginjo, which is also reasonably priced.
