Expedition & Train Sake. This time, we opened a bottle of the brewery's first pressing, which we got at the Takasago Shuzo brewery in Kokushimusou.
There are many different types of Kura-shu Ichiban Shibori, but when in doubt, choose Junmai-shu. This is freshly pressed sake that is bottled raw without being heated. It has a refreshing ginjo aroma, and while it goes down the throat easily, you can taste the umami flavor. If you are not aware of the fact that it is unfiltered raw sake with an alcohol content of between 18 and 19 degrees Celsius, you can easily drink it.
This is one of those bottles that makes you feel the pleasure of visiting the brewery. Delicious: ‼️
I thought it would be quite dry, but it is surprisingly easy to drink. It has a strong umami flavor and a spicy aftertaste, but not too strong.
I drank it with salted squid, and it was a perfect match 👌.
Today is the day of the National Warriors.
Since I can't open a four-pack of sake every day, I went to the supermarket and bought a small 300ml bottle.
Polishing ratio 60%, alcohol between 15 and 16 degrees. The rice used for the sake is Comet from Hokkaido.
Sweeter and mellower than expected. Slightly traditional flavor with a sake-like feel.
Comet is a promising star of Hokkaido's sake rice (just because it is a comet) and is expected to produce a light-flavored sake. I like the name because it is cool.
The delicious taste of rice spreads firmly in the mouth.
Yet, the sweetness is not too strong.
Good aroma through the nose
And dry with a sharp taste.

Not even the Asahikawa brewery sells this sake.
People are weak against the word "limited" 😅.
