Chikuma-Nishiki is the first Chikuma-Nishiki pure sake in a long time. It was a happy miscalculation to be able to get it again, as it was only available in limited quantities.
Again, I enjoyed the rich and robust flavor.

I wanted to drink a little, so I bought a small bottle.

I tasted it at Nozawa Onsen Nagano Ya and found it very interesting, so I bought it.
The banana-like aroma, sweetness of rice (Miyamanishiki from Nagano Prefecture) and coarse creamy texture came first, followed by a firm acidity. It has a color and a drinkable yogurt feeling. It is addictive.
The fluffy white color is like snow. The texture is thick and heavy on the tongue. The richness of rice and amazake-like flavor remain pleasantly in the mouth even after passing down the throat.
Gold and silver snowflakes are dancing on the label and piling up on the camellia. Winter will soon begin to leave. It was the perfect time to open this new nigori sake.
I bought a Chikuma-Nishiki Junmai Daiginjo yesterday at Aeon Liquor for about 1000 yen. It seems to be made entirely from Yamadanishiki. The alcohol content is 14 degrees.
I opened the bottle, poured it into a glass, and smelled the aroma, but there was not much. It tastes sweet.
When I warmed it up to lukewarm, there was not much aroma, but it tasted better than cold.

Hatsushibori, or new sake.
It has a slightly mellow aroma, with a slight bitterness that starts to develop halfway through. It is on the heavy side. I paired it with motsu nabe (a hot pot of vegetables), but it was refreshing and drained off the fat.
