I participated in the Chikumanishiki Sake Brewery open house event. This event is held twice a year in spring and fall.

[Aroma
Although the rice polishing ratio is 39%, the aroma is not so strong. This may be due to the nature of sake rice.
The main aroma is sourness, and it is refreshing.
Sour aroma of apple and pineapple, aroma of rice hulls. Aroma like orange peel. There is also a sense of alcohol.
There are sweetness of rice and spiciness of sake in the citrus aroma. Such aroma.
Taste.
On the palate, there is a fresh sweetness like apple, pineapple, peach, and muscat on the tongue.
However, the sweet fruity sensation is fleeting, and the mouth and nostrils are immediately flooded with sourness and pungency.
In the aftertaste, the aforementioned sourness and pungency are easily overcome, and one can enjoy a gradually sweet feeling.
Summary
Sweet and fruity...?
No! Spicy!
...But the aftertaste is gradually sweet!
This sake is like that.
It was not blended at the spring event.
It was easier to drink this time.
I wanted to buy another bottle of "Sakiya"! It was already sold out!
