A sizzling sound was heard when the bottle was opened. The top aroma is like that of rum. When you drink it, it has a pleasant astringency, a gentle sweetness, and a bit of cocoa flavor. It is delicious. The overtone is fruity. It is better with food than on its own. It goes well with bonito tataki and homemade simmered dishes.

Taisetsukei Shuzo, Kitaazumi-gun, Nagano Prefecture, Japan Junmai-shu, limited to the brewery
We have had this sake many times, and it is consistently delicious!
Not too heavy, not too light. It is a sake made with good rice and water.
Aside from the Tsuruling, which I think is a summer sake, it is the lightest first impression of today's three.
Relatively high acidity.
But it also has a long lingering umami taste, which is typical of hiyaoroshi, and sweetness can be felt at the mouth.

Kita-Azumi-gun, Nagano Prefecture, Japan. Taisetsukei Sake Brewery Co.
Taisetsukei Junmai Ginjo Unfiltered, directly pumped from the tank.
Purchased at Hankyu Sake Brewer's Festival. If there is a key word for unfiltered direct pumping from the tank, I will definitely buy it 😁.
Brought it to my parents' house for dinner.
I had it cold.
There was a small gas sound when the bottle was opened.
Numerous large bubbles adhere to the glass when it is poured.
The color is clear and colorless.
The top aroma is a bit of melon, muscatel, and berry aroma.
The mouthfeel is fresh and gassy.
The taste is a combination of berry aroma and juicy rice flavor with depth and rich sweetness. The final taste is exquisite and slightly bitter.
It's so good, and I like it very much.
Ingredients: Rice, rice malt (all white malted rice)
Rice polishing ratio: 55
Alcohol Content:17%.
I bought this bottle even though I am not a big fan of apples, sourness, or sweetness. However, it is a refreshing drink with no lingering tartness or acidity.
I recommend drinking it chilled in summer.

Onsen to commemorate the couple's 60th birthday. Doing nothing but relaxing.
We chose a local Shinshu Daisetsuken. The aroma is muscat, maybe, but it's nice. The sweetness and riceiness is elegant and fits perfectly with the bitterness of the sweetfish. Shinshu is delicious.
I hope the flood damage in Noto will not be too severe.
Good morning, WOM.
Congratulations to you and your wife on your 60th anniversary 🎉.
It's nice hot springs where you can relax and spend time doing nothing: ♨️
And Mr. Daisetsuken that graces such time is the best healing time for you. ☺️
Hi WOM 😃
Nice trip for you and your wife to return to Japan... ☺️ relaxing and doing nothing is the most luxurious thing 🤗 and if there is sake 🍶 and hot spring ♨️ then all you have to do is sleep 🫠.
We will catch up in a few years!
Safe travels in Noto, we'll be praying for you too.
Happy anniversary to you and your wife, WOM 🎉💐.
A relaxing soak in the hot spring ♨️ with delicious local drinks and food, what more could you ask for ✨That's unusual with so many skewers on the right 😳.
Thank you, ma-ki-. I never realized how much fun it is to relax and do nothing. I am grateful to my wife for letting me spend time with her. I am also thankful for the great snow ravine and sake.
Thank you, Jay & Nobby. I was thankful again for an ordinary day, and really enjoyed the beauty of a special day of doing nothing. They said we should do our best to be normal tomorrow. Please keep up the good work.
Thank you, Pon. The presentation of each one was heartbreaking. The main skewer was a sweetfish, and the other skewers were cucumber, polinky, and fu. Each one was delicious with detailed work.
Good morning, WOM. It is nice to enjoy a relaxing stay at an inn with great food and local sake without doing anything on a return trip to a hot spring 😊I love Shinshu trips!
Thank you, Hirupeko. Japan is full of good places and good sake. Shinshu is close by and has a lot of attractions, and Shinshu sake. It is really wonderful.
major design
This is the one where the bubbles start to blow.
Immediately after opening the bottle, the numbness of the bubbles gives it a dry impression, but as it settles down, it is sweet and bitter. It also gives a sense of softness.
Purchased at a sake brewery.
Located in Ikeda-machi, this sake brewery boasts an immense presence in the Chushin region.
The brewery's limited editions bear the name "Kamon" (flower pattern). It seems that the equipment for direct pumping has recently started operating, but when I went there, it was sold out. Too bad. They also sell snacks and goods in a fairly clean sales area.
Sake of the mountain It is good after all, Daisetsukkei.
The water from Azumino in Shinshu's Daisetsuken is one of my personal favorite breweries.
Since the end of August, I have been working overtime and traveling a lot during the busy season, but I finally took a break and opened a bottle I had bought and was looking forward to drinking.
The Mont Serie series is a limited edition line inspired by the famous peaks of the Alps, and Lance is a bottle named after Mt. It has a sweet, gorgeous, and rich flavor. It is brewed with Hiroshima yeast instead of the Alpine yeast often used for Daisetsuken. It was a cup of sake that soothed my fatigue.
The second photo is of Mt. Ootearai and Mt. Yarigatake (from Tsubame Sanso), which I took a long time ago. It was a perfect dawn at that time. I wish I could go back...

This was included in this month's hanpukai. It is a hit with its costumers 🎯.
It is fruity and umami, and goes down smoothly and easily.
By the way, I managed to secure a bottle of Premium Gold Competition yesterday: ☺️
Visit to Taisetsukei Sake Brewery Part 2
Left: Toku Jun Nama Sake
Design of mountains seen from Azumino
A bottle brewed with subsoil water from the mountains
Slightly stronger with an alcohydrate content of 17 degrees Celsius
Compared to the Hanamon Daisetsuei, this is a bitter raw sake.
After visiting Daisetsukenkei
I would like to visit Daisetsuken next...,
First visit to Azumino's Daisetsukei Brewery
The bottle with the flower pattern on the right
It seems to be sold only at the brewery.
Polishing ratio 59%, 17% alc.
The bottle was opened after a five-minute struggle with strong fizz.
It is crisp and has a perfect acidity and umami flavor.
Now, how about the other bottle of Toku Jun Nama Shu?
Hi Harry 🐦.
I see that the brewery is located in Azumino! I'm convinced that they can make delicious sake because of the beautiful water 😊I'd like to try some of their activated nigori ❣️
Hi Pon 😃.
Sake is brewed with delicious water from Azumino.
