Taisetsukei Junmai Ginjyo Omachi Nama-zake
It has an apple-like aroma that is typical of Shinshu sake, a clean taste and sweetness on the palate, a pleasant aftertaste, and a rich caramel-like minerality that lingers on the tip of the tongue.
This is a draft version of the "Daisetsukei D" that we previously drank.
The image of the characteristic minerality has become even richer.
Today's sake is from Shinshu
We will enjoy a Junmai-shu (Junmai-shu) Nagano R Yeast from Daisetsuei Sake Brewery!
This sake is brewed with a yeast that contains malic acid.
The aroma is fruity.
The taste is sweet at the beginning and gentle afterwards, and it is easy to drink.
Aromatic sake. You can feel the elegant aroma of rice in abundance.
It has a delicious taste that enhances the flavor of food without interfering with it!
Impressions after more than a week since opening
Freshness on the palate, with a light freshness. The aftertaste is a bit umami with a hint of umami.
I like the fact that it says "mountain sake" on the bottle.
Today we will be having a Daisetsukei from Nagano 😀.
I heard that this sake has been nominated for the IWC, and it tasted like it was made in Japan 😇.
All of them are fruity and have a strong umami flavor, but the acidity at the end finishes them off nicely and leaves no lasting aftertaste 😇.
If I had to pick one, I would say Kinjaku is my favorite, but it's hard to say which one is better 🤣.
