Oroku Hachimaru
It has the astringency and umami typical of 80% low-polished sake, with a salami-like aroma, but also a strange elegance without any unpleasant tugging.
We are currently exploring izakaya (Japanese-style pubs) in front of Matsumoto Station. However, the cost will be high, so we are trying to keep it moderate.
This restaurant opened last week next to the ramen shop Hizuki. The location and the fact that the restaurant opens at 3:00 p.m. are in line with the drinking habits of Matsumoto.
The young and pleasant master is a one-man operation. The food is delicious and the sake selection is maniacal, with four brands from within the prefecture and four from outside. I think it's seamless.
We will spread the word in a small way.
