No gasiness, but while it's cold, the main flavor is a somewhat schwaggy acidity that adds to the umami.
The bitterness consistently rides here and leads to a rather long finish.
As the temperature rises, the acidity mellows out and the sweetness becomes more noticeable.
The way the bitterness rides is a little bit of a turn-off.
