Shinshin SY, I like the name but can't remember the taste. I was sloshed again this day. I've been having a lot of these lately, and it's not good. Let's enjoy drinking at the end of the month.
Bessan, we both have trouble remembering things when we drink too much, I know, I know. Let's use sakéwa as a reminder of what we drank even if we forget what it tasted like. Let's celebrate with a drink at the "Noe" restaurant 🥂.
Transparent with a slight yellowish tinge. The aroma is mellow, with a combination of a grain-like aroma derived from the ingredients, a sweet aroma reminiscent of golden sugar, and an aroma reminiscent of acetic acid acidity. The aroma is medium in strength. The mouthfeel is smooth. The fragrance is also reminiscent of golden sugar, and the rich acidity gives it a rich, mellow mouthfeel. It has a slightly long aftertaste. A mellow sake.
The aroma is mild and the palate is light with a hint of rice sweetness and acidity. The aftertaste is dry with a hint of alcohol.
I would say it is a light and dry sake with the taste of rice.
Alcohol 15%.
Sake meter degree +2
Acidity 1.2

New Year's gift from my sister,
Myoko is a Daiginjo of Chiyonomitsu.
Gorgeous fruity,
Aroma with sourness and fruitiness,
It is silky and smooth with a hint of sweetness and acidity.
It has a slight sweetness, a firm acidity, a touch of astringency, and a soft slightly bitter taste,
It has a slight sweetness, a firm acidity, a touch of astringency, and a soft bitterness,
The taste is clear and transparent, as if it soaks into the palate and disappears quickly,
It is beautiful and elegant,
It is beautiful and elegant, yet has a delicious taste.

I bought a bottle of Chiyonomikari during the sake brewery tour yesterday.
Since I was in the area, I bought a bottle of fresh sake.
It's unfiltered, so it's almost exactly as it should be?
Fresh, slightly carbonated, but strong!
So sweet and thick, but easy to drink.
But it's probably dangerous because it's 18 degrees!
It's also a bit yogurt-like.
Delicious!
Eating raayu with kaki no tane (persimmon seed) that I bought as a souvenir? Also a photo of the
Continuation of the Joetsu Myoko ski trip.
Today, we took a tour of the sake brewery at the Chiyonomitsu Sake Brewery. It was quite interesting.
The former president of the brewery gave us a detailed tour of the brewery, and afterwards we were allowed to try our hand at assemblage (making your own one-of-a-kind sake).
We tasted 2 types x 4 types = 8 blends (5 to 5 ratio) and chose the one we liked best.
I changed the ratio to 7 to 3, 3 to 7, etc., and compared them to decide which one I liked best.
Two types were classical or modern?
The four types were four representative brands of Chiyonomitsu Sake Brewery.
Three of us did it, except for the two who were driving, but we all had very different tastes!
It was a fun sake brewery tour.
Chiyonomitsu Sake Brewery. Thanks to everyone for being so kind!
I can't comment on the taste, but..,
