I was curious about Sawahime's Peach Color Nigori after Tsubu-chan's post! ...but the cap and label are something different 🤔.
I'm not sure if it's a red yeast sake, but is it a raw sake or a fire-aged sake? I was nervous when I opened the bottle, thinking that it might spew like Sawahime's nigori sake that I opened earlier... but it quietly popped😳The ori also remained at the bottom.
What was that? What a surprise!
The label says, "Like a dessert wine. Despite the harsh color, it has a moderate sweet-sourness like ripe strawberries and a gentle flavor. At 8.5% alcohol, it is easy to drink like a juice.
The next day, it was like a light whey drink with an increased whey feeling and flavor.

I couldn't taste the supernatant because of the violent automatic stirring. It has a light and lively aroma, a slight peach and apple-like aroma, an alu feeling, a rice cake-like and mushroom-like aroma, and a light and refreshing taste. First of all, we were very careful because of the activity,

I picked it up in a hurry, washed it, and immediately put it back on.

Because it is not a cap that can be turned
The lid opens quickly and out of control 😭
Unfortunately some of the precious liquid leaked out 😢😢
Wipe it off immediately,
Wrap it in newspaper and put it in the fridge (max).

The liquor store said it would spew out! So I drilled a hole with a needle to vent the gas and was able to open the bottle safely 😁.
I felt it was easier to vent than a screw.
It has a fruity sweet flavor like white peaches with a dry bitterness that adds a nice accent. It's hard to open, but it's delicious.
I hesitated when I bought it because I thought it would be hard to open, but I stuck to my Tochigi love 🤗.
I wish my local liquor store would stock more Sawa Hime because they sell out very quickly 🙄.

Year-end custom: Onsen samadai at Oku-Nikko Yumoto 🎵
There was still some hiya-otoshi (grated sake) left, so I took that. Local sake. I have never seen Sawahime anywhere else. I wonder if they don't sell it outside of the prefecture much❓.
It's not really a special sake, but it's a very tasty sake. It goes well with teppan-yaki Date chicken.
On the way there was a regular spacia, but on the way back we will be on X‼️ relaxing sofa seats drinking local beer 🎵😆😆.

Cleaning out the refrigerator
Purchased at the Hankyu Sake Brewer's Festival after hearing the brewer say, "This is what we call a perverted sake" 🤣.
He said it was too acidic to drink unless the sake level was raised.
We will drink it cold.
The color is quite yellow, like a strong whiskey with water, or maybe plum wine is better.
The top aroma is a sweet aroma of rice and a mature aroma similar to that of Shaoxing sake.
The mouthfeel is smooth, and the matured aroma leaves the nose as soon as it enters the mouth.
The slight sourness and mildly matured sweetness are a perfect match.
There is a slight bitterness before swallowing, but it is washed away by the mild sweet and sour acidity.
The rice is milled at 85%, which is a daringly low milling ratio, and the ratio of rice malt used is said to be about 4 times higher than usual.
The description says 2019, but it was made in 2022, so I guess it has been aged for a year 🤔.
It's a little bit peculiar sake.
