Actually, it's nice to meet you, Yamori.
The aroma has a mild graininess.
The mouthfeel is smooth and the body is full of rice flavor.
It seems modern, but in the latter half of the bottle, the classic "kokkuri" (richness) comes out and it has an interesting balance.
There was a sizzling sound when the bottle was opened. The top aroma is like molasses. When you drink it, it is juicy with a slight carbonation. It has a strong sweetness, a slight sourness, and a pleasant bitterness. This is delicious. The aroma is fruity. It is a dangerous sake that is easy to drink despite its 16% alcohol content. It tastes better when well chilled. It goes well with yudofu (boiled tofu) and sashimi of tuna.
Is it similar to Shinshu Kamerei?
Especially, it is my favorite sake.
Hachitan-Nishiki produced in Hiroshima Prefecture
Polishing ratio 55
Alcohol 16%.
Sake from Tokyo, which I have not had much access to because of its proximity.
It tastes like sake. It also has a sweet taste. It has a sweetness to it.
It is delicious!
Junmai Nakadori, Yamori's signature model.
The aroma is mild.
The moment you drink it, it is tangy and stimulating on the tongue.
It has a sweetness at first, but the aftertaste is refreshing.
It is easy to drink with a spiciness.
When I drank it two days later, it seemed milder.

The fifth sake go-around was at Miyoshigiku, where the toji was also there, but I forgot to take a picture so I omitted it🐾.
The sixth sake was Yamori🦎 Hiyoroshi (hiya oroshi).
The president and chief brewer of Toshimaya Sake Brewery was there.
The first aroma was slightly sweet.
In the mouth, it has a mildly sweet flavor that is typical of hiyaoroshi.
I have often tasted bitter tastes in Yamori's unpasteurized sake, but I did not taste any bitterness due to the fact that it was once fire-aged.
It was delicious 🍶✨.
