Shinanotsuru Shinshu Secret Sake Hanpukai Gold Course
This sake is the Secret frame of the sake I bought on my trip to Shinshu ✨.
At first glance, it looks just like the "Gantaku" we opened last time, but it's actually a "Hanpukai Limited Edition".
The label is on the regular "Gakutaku" label, but the contents are an assemblage of a fire-aged Junmai Ginjo and a Junmai Daiginjo!
You can tell the difference by the "G" on the lid of the fourth collage photo, which is the "G" for "Hanpukai Gold Course.

The aroma of rice with a fruity apple-like flavor that is typical of Shinshu sake, a sweet atmosphere and deep lingering aftertaste from the robust umami of the first sip, and a lingering bitterness at the end.
The lingering aftertaste is quite long with a trip time of 53 seconds, a new record!
[Mokkiri]
The aroma of rice is typical of Shinshu sake, and just like the gulping sake, the mouthfeel is firm and sweet, with a long and pleasantly intoxicating aftertaste.
It is characterized by a pleasant lingering aftertaste that can be felt with each sip, and its even stronger flavor and lingering aftertaste than regular "Gantaku" can be drunk as a bedtime sake with light appetizers.

The third cup is Shinanotsuru. Traditional label. I thought I had had it before, but I drank it in August at this restaurant. Tasumi" is the nickname and haiku name of the founder. The brewery is located in Komagane City, Nagano Prefecture, and is said to be dedicated to producing only junmai ginjo. It has a dry taste. The aroma is delicious.

We were lucky enough to find the last bottle of the "Gakutaku" that Takeshon had praised so highly on a recent trip to Shinshu, and we found it at Nakajima Sake Shop in Matsumoto City ✨.

Mellow apple-like aroma, mellow flavor and apple-like sweetness on the palate and nose, then a sharp finish with a deep aftertaste and a lingering bitterness that lingers in the throat.

A clean apple-like aroma, juicy flavor, sweetness, and an apple-like aroma on the palate, followed by a sharp, pleasant aftertaste, and a bitter taste that lingers in the throat at the end.
Both are characterized by a deep lingering aftertaste from the umami sweetness and aroma reminiscent of apples, which is typical of Shinshu sake, and no~ this is delicious 😋.
This is one that I will actively seek out when I visit Nagano 🧐.
The entrées are the seasonal "bonito tataki" and the "seared shime saba" which I've been really into lately!
The origin of the name "Stubborn" comes from the fact that the second president [Takuji Kitahara] was famous for his stubbornness and was called "Stubborn Takuji", meaning "Stubborn Takuji", which seems to have nothing to do with "Mushyagandamu" 🤔.
