Perhaps because it has been aged for a relatively short period of time (3 years), it is a bit lighter than other old wines I have had.
I was told that one can enjoy the changes after opening the bottle, so I drank it for about a month, but the taste did not change that much. The taste did not change that much.
Old sake is interesting for drinking a few cups, but for me, a bottle might be too much😅It was a good experience for me.

The last bottle I bought on my trip to Shiga.
I haven't been drinking lately because I've been cheating on lemon sours and beer😅.
I heard that Shiga's sake is characterized by its strong taste, so I requested a Shiga-like sake, even though I'm not good at strong sake. Here is what he recommended.
It was indeed very strong. Moreover, the sake is brewed with only a small amount of water, which is called jumizu-jikkuri, and it is said to have a strong flavor.
We started with cold sake. Next time, it was too thick, so I added ice. It was still quite strong. Finally, since it was summer, I drank it with soda. It was nice to be able to taste the sake even when it was mixed with soda.

The carbonation makes it a light drink, but I think it has a strong umami taste, so I recommend it to ma-ki-san who likes the umami taste of rice. 👍️
