KANKENBAI TORESE 13 Junmai Ginjo
Excuse me for the all-you-can-drink from my usual business trip.
Here is the first one‼️The aroma is a good ginjo aroma, the first attack is schwarish, a little dry from sweet, easy to drink and delicious sake‼️The entrée is sashimi and smoked edamame‼️
We got off to a good start😊.
It has a low alcohol content, but the umami of the rice and the acidity that follows afterward are pleasant. It is a bottle I would like to drink again.

This is a repeat purchase. Chilli, slightly effervescent, bitter and tasty, yet light and easy to drink 😋 It is dry, so it goes down well!

I had a bottle of Kankoubai just the other day, but I think I prefer this one😅.
I bought it at a liquor store, attracted by the label. The brewery was originally a collaboration with Mie University, but the toji apprenticed himself to Toichi because he wanted to make good sake. The brewer said that the name "Kankoubai" means "early blooming" in Japanese, while "hi-ire" means "late blooming".
Upon opening the bottle, the sake is quite rich. It is juicy and fruity, but I can't think of the right word to describe it. I felt it had a persimmon-like mild sweetness, but with a bit of sourness added to it.
It would certainly go well with white fish carpaccio. I would recommend drinking it chilled.
I thought it was a story sake from the label, but the taste is first class.
Is it because it is a junmai ginjo? The balance between the acidity and the taste was very delicious.
