We had a bottle of YOKOYAMA SILVER7 Junmai Ginjo Unfiltered Unrefined Nama-Ginjo.
The nose has a very strong fruity and mellow aroma like muscat.
The palate is filled with a thick, umami sweetness, with a slight astringency on the face, and a lingering sweetness that lingers on the tongue.
Mmmm...delicious! Delicious!
The impression is that it is surprisingly refreshing, in contrast to the richness of the umami sweetness 🎵.
This is one of our favorite Yokoyama bottles, with a particularly nice aroma and umami sweetness👍.

Another brand from the brewery that brews my favorite "Yokoyama"? Besides, it is Aizan. The anticipation was overwhelming. I prepared a glass of white wine, just as it says on the label. When I opened the bottle, I was greeted with a sweet aroma of fresh peaches. In the mouth, it was like biting into a whole fruit. It starts with a strong sweetness, and when you swallow it, the aroma of peaches wafts into your nostrils. The sourness and bitterness, on the other hand, quickly bring the aftertaste to a close. It is delicious! A little too sweet. The white wine glass wins. When paired with mozuku vinegar, it becomes light and easy to drink. The main snacks are delicacies from the fishmonger. The squid rice cake is sweetly seasoned, so the sharpness of the sake invites you to take the next bite, creating an endless loop. It is also good with the sweet and sour rape blossoms herring...and with the salted olives, it might be a little too good to be true, as the sweetness remains in the mouth. But when you eat this with blue Brie cheese and drink it afterwards, the atmosphere changes completely and it's delicious. The marriage is fun! The important thing with this sake is not to raise the temperature. Chill it well, pour a little into a white wine glass, and drink it as soon as possible.
