I went to a liquor store that I don't usually visit and found a bargain. I found a bottle of Kaiun Hiyayogoshi and a bottle of Honjozo.
Today, I had it at room temperature with fried aji (horse mackerel). It has been cooler here in Osaka since three days ago, and sake at room temperature goes in easily.
Seafood, Kaiun, and Shoyuki are all good choices, but Shizuoka sake goes well with aji. It is delicious. This is the first time for me to drink a Honjozo class Kaiun, but it is just as I imagined. It is a beautiful sake, but it has a clear and pleasant aftertaste.
You can't go wrong with Kaiun.
It is the second half of September, but it has been extremely hot every day, and autumn sakes are being released one after another.
Today's sake is Kaiun Hiyoroshi, which has a refreshing muscat-like flavor with a solid core. The dryness and bitterness of the aftertaste are also a nice accent. It is a sake of the royal road.

The hiyaoroshi I always drink every year are Kaiun and Tsururei.
Kaiun hiyaoroshi is exquisite.
It is calm and has a delicious taste of rice and sweetness.

I had an image of hiyaoroshi as a refreshing wine, but it is true that it has a strong and robust flavor. I remember that Shizuoka's Kaiun was recommended to me when I wanted acidity.

My grandfather on my father's side was born in Kakegawa, and my mother's family lives in Iwata, the next door neighbor, so I have a connection with Shizuoka, but I have not been drinking much Shizuoka sake.
The aroma on the nose is sweet (vocabulary).
On the palate, there is a slight acidity and a mild sweet umami flavor.
It was very mellow, probably because it was made in December last year.
