The sake rice is Yamadanishiki and Tamaei, so it's Yama☆Tama!
It seems to be bottled with different heat treatments.
It is said to be finished with a mixture of 35% once-hired and 65% twice-hired.
Interesting!
H30BY was warmed to a high temperature. The color is amber. It has a mellow, candy-like matured feeling and a sharpness with the acidity of a sake yeast.
Warmed up. The color is amber, and although it is a 70% polished sake, it has a light and refreshing taste due to its 13% alcohol content, and it is sharp with the acidity of the sake.
Slightly astringent or slightly sour on the palate. You can hardly taste the rice. It is not as refreshing as it should be, but it does not taste sweet. It may be a little too much for some meals.
I was attracted by the sake degree of +11, so I bought it at a sacred place.
I will enjoy the change in taste as it is rare to find Tottori sake 👍.
When you open the bottle and pour it, you can smell the aroma of barley, oolong tea, and grains.
The amber color when poured also shows the weight of the flavor.
The mouthfeel is robust. The full-bodied flavor of rice and the strong dry and acidic taste give the impression that this is a quintessential Tottori sake! Then, a savory sweet astringent taste like caramel emerges from the spiciness and acidity. As expected, it is a satisfying taste with a profound umami ✨.
I don't need to tell you that it's a must if you warm it up. And the punch of umami that blows away the heat is also exceptional 💪.
Hiokizakura, Namao Yumachi
(Amber in color)
Junmai sake brewed using an ancient technique. It has a strong initial attack of rice flavor and a thick lingering aftertaste. The sake is dry and mellow with a sake degree of 13 degrees.
The aroma gives the impression of maturity.
It also has a faint aroma of steamed rice and yogurt sweetness.
As a drink to go with the sake, something a little stronger in flavor would be good. If it is light, sake will win. Good for sake lovers.
Sake from Tottori
I bought this at a sake brewery when I visited Tottori last November.
The father of the brewery said, "I don't approve of sweet sake.
I am fine with that because I have a wide range of tastes from sweet to dry.
It has been more than half a year since it was bottled, but when you put it in your mouth, you can feel the robust and honest flavor that is typical of strong sake. The aroma is impressive and refined, not like a country sake.
The fact that the producer of the rice is also clearly stated on the bottle is also a sign of confidence.
It is not flashy, but it is not too assertive and does not pander to the latest fads.
Thank you very much.
Good morning, Hakata Sabaski 😃.
I see you visited a sake brewery in Tottori! I think I know what your father is talking about because when it comes to dry sake, it's like Tottori sake 🍶😊We are all-rounders from sweet to spicy drinkers too 😚.
Good evening, Jay & Nobby!
I knew you were an all-rounder 😄
I enjoyed the sake while remembering the face of the earnest-looking father!
It's fun to buy from a brewery because of this added bonus ✨.
