On a previous trip to Izumo, Toyo no Aki was served as a free-flowing sake at the inn. I wanted to try a bottle of Tachiharu Asashibori, which was one of my entry points to Japanese sake, so I contacted a liquor store in Shimane to sell it to me by mail. Thank you very much.
When I drank it, I found it to be rice, and fruity. The sakeiness is rather present compared to what I've had recently. But it is gentle and mild, a softly sweet rice that tends to be dry. It is raw but without much piquancy. There is no gap between the aroma and the taste.
It may be a bad idea to warm it up, since it is a draft sake, but it tastes good even if it is heated. The fruity flavor is gone, and it's all about the rice. The sweetness is not emphasized, but in a good way. I have the impression that the sharpness improves.
As the day goes by, it becomes mellower. The acidity is fruity, and after swallowing, the rice and sweetness come through.
It had been two years since I had had Toyo no Aki's Risshun Asa Shibori.
It seems that in the past I was drinking it with the impression that it was slightly dry, but this year's was a gentle sweetness from a light mouthfeel 😌.
Somehow it feels easier to drink than before♪
I have not had many of Toyo no Aki's sake because of the image of dryness, but maybe I should try some of their other sake.
