Nishiyama Sake Brewery "Kozutsumi"/Tamba City, Hyogo Prefecture
Kozutsumi" was named by the haiku poet Kyoshi Takahama.
Nishiyama Tomoun, the third generation brewery owner, is a disciple of Takahama Kyoshi's haiku.
The brewery uses mainly ultra-soft well water and sake rice from Hyogo Prefecture.
This is the first time I have had this sake.
Kozutsumi Junmai Daiginjo Nama Sake.
Fruity, rich and delicious. My favorite type.
Roujou Hana Ari Kurobotan (Black Peony)
Made with Tajima strong sake, it is quite sake-like and a bit spicy.

Tamba Kozumi Bishirokoukou Sake
It's a bit spicy and tasty with a slightly peculiar acidity. I would have rated it higher if it had a bit of a quirkiness 🤣.
I would like to try more of this brewery as well.

Kozutsumi Hatsute Shibori Junmai Ginjyo Nama Nama Sake
This brewery is located in Ichijima-cho, Tamba, Hyogo Prefecture.
This is Kozutsumi's first sake of 2015.
Sake rice is Gohyakumangoku.
The taste is fresh and rough.
It's a raw sake, so it's a little high at 17 degrees,
Be careful how much you drink!

This brewery is located in Ichijima-cho, Tamba, Hyogo Prefecture.
This is an autumn limited edition sake from the Shikinzoku series.
The malted rice is Tajima strong, and the premium rice is Hyogo Kitanishiki.

The hue is a light golden yellow, and there is almost no smell. I'm more interested in what will happen to this momentary feeling of kijoshu.
The approach is clearly different from the kotsuzumi I know.

The taste may be classified as fruity, but the Alc sensation on the tongue is high.
This discomfort...or perhaps the sensation is that it is an apricot syochu liqueur... ⁈The mysterious smell of aging sublimation begins to assert itself loudly...

The end of the sublimation smell is the Alc smell...to be frank, I don't want freshness...it is the peak of the sweetness that runs over the tongue...well, it feels like a fruit wine...the Alc attack is very tricky...it is a little too much...

The sublimation smell is quickly gone, and the Alc smell is asserted as a lingering aroma. The aftertaste is, dare I say, refreshing?

The aroma immediately after the first sip is astonishing (in a bad way).

The description says, "Please enjoy the fruity aroma and sharp sweetness of this sake cold," but I felt it was better when the temperature was higher, as the mysterious, uncomfortable fruitiness was lessened.
In a sense, it is amazing...
It's a fresh feeling sake 🍶.
The sourness comes and immediately tingles on the tongue: ‼️
The tingling sensation lasts for a long time.

Slightly amber in color. It has a melon-like scent in the mouth, a dryness with a Junmai-like aroma of sailcloth, and an easy-drinking and umami taste.
