When you put it in your mouth, the first thing that comes to the tip of your tongue is a tingling, numbing microbubbles. Next comes a refreshingly sweet, youthful melon flavor. 小鼓　純米　無濾過　生原酒 Kitaizumi Junmai Muroka Nama Genshu 精米歩合　麹米　50%　掛米　70% Seimaibuai: Kouji-mai 50% Kake-mai 70% アルコール　17% Alcohol Fairly cloudy Initial flavor has a Pronounced acidity stings the back of my tongue. Umami sweetness lingers. This is very nice to drink by itself. Oh! Mixing the 澱 really brings out a much fuller flavor. Delicious! Pairs well with sashimi/sushi. Does not lose to Okra 朝付け. Can’t wait to try other sake from this 蔵。

100% Tajima strong is used, 2023 no Imasa Shikabo Ri! This year's is spicy! The nose is sweet like wine grapes. The attack is spicy! Not without sweetness, but the acidity and dryness combine to make it a dry sake, but the sweetness remains in the mouth after a mouthful of glucose. When the wine is rolled again, the umami and richness of the flavor come out. It is so easy to drink that you may end up guzzling it down.
