Umami sweetness lingers. This is very nice to drink by itself. Oh! Mixing the 澱 really brings out a much fuller flavor. Delicious! Pairs well with sashimi/sushi. Does not lose to Okra 朝付け. Can’t wait to try other sake from this 蔵。

100% Tajima strong is used, 2023 no Imasa Shikabo Ri! This year's is spicy! The nose is sweet like wine grapes. The attack is spicy! Not without sweetness, but the acidity and dryness combine to make it a dry sake, but the sweetness remains in the mouth after a mouthful of glucose. When the wine is rolled again, the umami and richness of the flavor come out. It is so easy to drink that you may end up guzzling it down.

Hearing that freshly pressed sake was for sale at 4:00 in the morning, I drove two hours down the road from my house to visit the brewery! The name "Kesashibori" is stylish! The koji rice is 50% and the kake rice is 70%. Dry, light nigori with a strong acidity P.S. When I drank it a week later, the curd was removed and the umami flavor came out. Rice used: Gohyakumangoku and Kitanishiki When I first entered the world of sake, I used to drink Kozutsumi with this label. For me, it is like the originator of nama-shu, and I miss it very much.
