Umami and a little sweet. Pleasant. It's like the honey of 🍊 honey. But it is not too strong.
After a few more drinks at Tanita, a famous restaurant in Matsuyama, we went to a second meeting at Kurumotoya, a standing bar directly owned by the Ehime Sake Brewers Association 🍶The selection of Ehime's local sake is amazing👍.
I was unable to upgrade the Sake-no-Wawa app on my long-time iPhone 7, and it finally became unbootable 😰I had no choice but to switch to an iPhone 13 and was able to post on Sake-no-Wawa for the first time in a long time 😂.

Sukkiri✨. Dry and sharp. It has no habit, so it's easy to enjoy. Pair it with the famous thinly sliced fresh okoze (okoze liver, yum!).
From Uwajima, we took the Yosan Line (🚃) to Matsuyama, enjoying the terraced fields of 🍊mikan and the spectacular view of Shimonada. We had dinner at the famous restaurant "Tanita", which is featured in Kazuhiko Ota's book 😋 We had a private room on the second floor to relax.

Pear, kiwi, grape, kumquat, milkshake... The palate has a sweet and sour attack, not strong, but a little sultry, cleaner than the top notes, but with balanced power as well. It has a feminine but firm feel to it.
It was called super dry, but I didn't feel that much.
I felt it might be the end of it, but I enjoyed the delicious taste.

I have never seen Yukijaku before.
The brewery uses medium-hard water with a hardness of 5.5, and won the gold medal at the Delicious Sake with a Glass of Wine Award 2024.

Made with Yamadanishiki. It is fruity and mildly sweet, and I think I liked it a lot.

This is another unknown sake brewery, Yukijaku Sake Brewery.
It is made from Yamada-Nishiki with a 38% rice polishing ratio and unfiltered.
According to the official website, there are two types of sake: hi-ire and nama, but the one I drank was probably hi-ire.
I think it was fruity and quite sweet 🤔.
