OSAKA SAKE & FOOD EXPO 2024⑬ Yomiuri Shimbun's booth again. I have never seen Yukijaku before. The brewery uses medium-hard water with a hardness of 5.5, and won the gold medal at the Delicious Sake with a Glass of Wine Award 2024. Setsujaku Yoiihime Mangetsu Junmai Daiginjo Nama Sake. Made with Yamadanishiki. It is fruity and mildly sweet, and I think I liked it a lot. Photo is out of focus💦.

OSAKA SAKE & FOOD EXPO 2024⑧ This is another unknown sake brewery, Yukijaku Sake Brewery. It is made from Yamada-Nishiki with a 38% rice polishing ratio and unfiltered. According to the official website, there are two types of sake: hi-ire and nama, but the one I drank was probably hi-ire. I think it was fruity and quite sweet 🤔. Forgot to take notes💦.

It has a bitter or thick taste at first, but because it is a daiginjo, it has a pleasantly fruity aftertaste. It is a sake that can be savored well. It goes well with canned mackerel with olive oil and rock salt. The mackerel's greenish taste matches the bitterness. The strength is just right. Not the best match by itself! LOL! Postscript. It also goes well with the acidic strawberries at this time of year!
