Takijiman is sold in my neighborhood, but I have not had much of it.
Takihantama Dry Junmai Taki Suiryu (Hayase)
The rice used for this sake is Gohyakumangoku. It is a signature product. It is a very dry sake with a sharp finish.
◉Takishige Kami no Ho Autumn Agari
Mineral and light on the palate. It has a delicious flavor and a slightly acidic finish.
Junmai Daiginjo
This is a 45% polished Yamadanishiki. The aroma is restrained and slightly citrusy with a very good balance. A great all-around sake. An International Challenge award-winning sake.
Not a very large brewery. It is brewed in smaller tanks.
Polishing ratio 45%, autochthonous yeast, Yamadanishiki, 16%, Sake degree ±0, acidity 1.6.
Great ✨ with just the right amount of sweetness and umami.
The acidity is clean and fresh.
I don't know what part of this is super limited, but the naming suggests the brewer's pride.
The label on the back of the bottle looks like it's obscured by condensation, but I can somehow decipher it 🤗.
This was a delicious sake that exceeded my expectations 😋.

Like the last time, it is a classic sake with a strong umami flavor.
It's not sweet, so you don't get tired of drinking it, and it goes down very well.
It may be difficult for beginners, but it was great to compare different genres of sake: sweet, effervescent, and classic.
