The most popular sake among my friends this time was Chichibu Nishiki's Yamadanishiki Dry Junmai Sake from their craft sake series! By the time I tried to sample it, it was already sold out😭.
But we had already had it once when we visited Chichibu Nishiki's brewery 🤣.
I guess I forgot what it tasted like because I was so busy gawking at the handsome mannequins at the brewery 🤪.

Yao Honten is a brewery with a 270-year history, having moved from Omi to Chichibu City.
Chichibu Nishiki Special Junmai
The taste is rich, full, and delicious. It has a slightly complex aftertaste.
I got a copy of the Saitama Prefecture's PR magazine, which has a map of Saitama's sake breweries, and on the cover is Angora Muracho, the Nyanko star. Angora Muracho is also from Saitama.

Yao Honten in Chichibu City
Omi merchant moved to Chichibu and founded the company.
In addition to sake brewing, affiliated companies also operate sake wholesalers, department stores, and electronics retailers.
I don't have a source, but it looks like they are distant relatives of Yao Brewery of Suzumasamune in Shiga. The brewer of Suzumasamune mentioned it on SNS before.
I've seen Chichibu Nishiki a few times at Kobe Hankyu, but it was labeled dry, so I passed on it💦.
Polishing ratio 60% Miyamanishiki, Sake degree ±0, 15.0 degrees, 1160 yen
It has a deep taste with a bit of acidity.
What can I say, it's proper and delicious!
It seems to be a standard product of Chichibu Nishiki.
It's a little over 1,000 yen, so it's very cost-effective.

It is a standard sake,
It is clean, refreshing, and has a subtle flavor.
Today, I happened to hear from one of my juniors at work that he went to the Mimine Shrine ⛩️ as he does every year, and I was inspired to taste the spirit of the Mimine Shrine and the nature and food of Chichibu.
No schwarziness as expected, though,
The acidity is fruity and sharp for a nigori.
It has a crisp mouthfeel. It goes down your throat just right.
Fresh rice flavor.
It is perfect for this hot day.
