Hanpukai no Toyoga
This is a mellow, unpasteurized sake with a mild aroma and taste. It is fruity but also rich, with a balance closer to mellow sake.
We prefer it at room temperature rather than cold, so we think it is best to drink it at a higher temperature slowly.

Somewhat yogurt-like aroma.
Umami combined with bitterness and almost no sourness.
The bitterness lingers in the aftertaste.
The lower the temperature, the better the sweetness and umami.

The sake seemed a little stiff, but after some time it mellowed very much.

Toyoga Tennyo no Shizuku Unfiltered Nama-zume.
The Shinshu Secret Hanpukai has a showdown of female toji for the month of June.
First up is Toyoga, brewed by pioneering female toji, Kayoko Takazawa.
It has an aroma like freshly picked apples and a smooth mouthfeel that is so fresh and chili-like that it is hard to believe that it is fire-aged. While sweet and sour nuances spread, the aftertaste is clean and crisp.
It has a sense of balance or interestingness that is rare for Shinshu sake!
Recommendation! Well balanced and robust in flavor and acidity, the 2025 has a noticeable acidity but is full-bodied and great as a food sake. Suitable for oil.
