Iida Sake Brewery - Spring Session 🌸 The last 5th brewery is Ippongi in Fukui! Junmai Ginjo Nama Sake 🍶 Denshin Haru🌸 Gentle and sweet. But it is also dry and sharp. Junmai Ginjo Namazukuri ✨ Tokyo Kurarayakko The acidity is typical of the Namazukuri style. Refreshingly dry. This one is a ginjo Nakakumi-nama 🍶 tastes similar to the unfiltered version. Beautiful dry taste, Junmai Daiginjo, full of flavor, not too floral. Pleasantly dry. ☺️ We were told about a garden with a sake brewery where we can enjoy a light meal. I would like to visit there someday as it looks like a fun place with a nice view 😆. Iida Sake Brewery - Spring Session 🌸 The second brewery was Akita's Fukukomachi🍶. The first cup was Junmai Ginjo Nama Sake 🍶 Miso Nishiki 🌾 It was crisp and dry. When you take your time with it, you can taste the sweetness of the rice honey and the deep flavor. The second cup is Junmai Ginjo Shinshu Nama Sake🍶Sake Komachi🌾 moderate acidity✨dry, gentle taste ☺️ The third glass is aromatic dry junmai🍶 less assertive and light. A little grassy, soft around the edges, good as a daily sake👍. Kagamiyama×Iida Sake Shop collaboration sake😆 Junmai Daiginjo Unfiltered Nama ✨Lemon🍋, Citric Acid, Greffle. It was a sour and refreshing sake. It's a limited edition sake for overseas 🍶I heard they are serving it in Hong Kong. Daiginjo Nama Sake ✨Dense and umami. It also has a strong sweetness. I wonder if this kind of thing is popular in Hong Kong 🤔. Omachi🌾Special Junmai Unfiltered Nama Sake✨ Well balanced and pleasant to drink. You can also feel the bubbles. Special Junmai🍶 Yamagata Prefecture Izumiwa no Sato🌾. Not flashy, but a little dry, sharp and full-bodied. Slowly. Take your time. Goes great with grilled salmon from Murakami, Niigata. A week later, serve with pork koji. Warmed up at ♨️ 55 degrees, it is still hard. 65 degrees will open it up. It is easy to drink and the umami spreads. Junmai Ginjo🍶Aged Sake✨Snow❄️☃️ Aged sake, light yellow in color. Cold sake, matured, Daruma Masamune-like. Not heavy, warmed to 60 degrees. Soft around the edges. Mellow. ☺️ It's still a sake for warming up. I served it with scallop sashimi sent from my relatives in Hokkaido 😋The scallops were huge and delicious💕. Purchased at Iida Sake Shop @ Shiki.

Junmai Ginjo🍶Bonwu✨ It's a pure rice ginjo 😅 mirin. The aroma is like an old sake like Daruma Masamune. When you drink it, it is matured but also refreshing. Sourness and spiciness. Hot sake (60 degrees). Mellow aroma. Gentle flavor. My wife says it has a spicy taste 😆 Very good match with bonito tataki👍. I think the sake might be too much for Hiramasa 🤔. I finally bought a heating device "Kanmakase" supervised by Shinkame 😆 Very convenient. A sense of maturity but no twitchy aroma 👍. Umami and acidity. Dry aftertaste. Goes well with Seijo Ishii's Hokkaido Takowasa. Later, I had it warmed. Very tasty. Bitter chocolate 🍫.
