The moment you taste it, it's sweet and spicy with a touch of rice (🌾). Bitter aftertaste. Bitter aftertaste. The melon on the back increases the spiciness when paired with sushi. Match with yamakurage tamari-zuke (pickled wild jellyfish). The texture is very crispy.
After 3 days, red clams with a strong kelp texture. When combined with the sushi, it is less bitter and medicinal than the last time.

The second bottling of Kagamiyama, which I had the opportunity to participate in the GW brewing process 🎉 Slightly effervescent, not as explosive as the first one. Sweet and sour Japanese pear type. Refreshingly cucumbery. Goes well with peach cured ham🍑. Mushrooms are also nice 🍄3 days later, cheap Kobe beef 🐂cumquat acidity matches the fat 👍salty and flowing. Serve it cold. Sweet and sour with a dry taste. It's refreshing ✨ with a bitter taste like grefleur. Lightly seasoned, light sake that goes well with other light sake.

As the label says, super rough straining, took about 5 minutes to open 😅 managed to open it without it blowing out. Melon🍈 to banana type🍌 area is spicy 🍈 but also throaty. Moromi, rice feeling. But it's refreshing. Mellowness. Lactic acidic tenderness.
This is the first sake that I participated in the brewing of the brewery in May 😆 It's only a little, but there's something special about sake that I was a part of 🎉.

Slightly sweet per taste, spiciness of alcohol. Strong flavor. Goes well with squid mentshi. It is good with oysters (🦪) to increase the sweetness 👍. The taste of rice is clear.

I tasted it at a Gokurakukai and bought it because I thought it was easy to match with food. First of all, it's a dry schwarz ✨ with a kinky cold ❄️. A little harsh 😳. The first cup was Junmai Ginjo Nama Sake 🍶 Miso Nishiki 🌾 It was crisp and dry. When you take your time with it, you can taste the sweetness of the rice honey and the deep flavor.
The second cup is Junmai Ginjo Shinshu Nama Sake🍶Sake Komachi🌾 moderate acidity✨dry, gentle taste ☺️
The third glass is aromatic dry junmai🍶 less assertive and light. A little grassy, soft around the edges, good as a daily sake👍.
The 4th glass was a special junmai sake 🍶 extra 🎉I bought this one and drank it at home, I'll post it later 😅

It's a limited edition sake for overseas 🍶I heard they are serving it in Hong Kong. Daiginjo Nama Sake ✨Dense and umami. It also has a strong sweetness. I wonder if this kind of thing is popular in Hong Kong 🤔.
Omachi🌾Special Junmai Unfiltered Nama Sake✨ Well balanced and pleasant to drink. You can also feel the bubbles.
Junmai Super Limited Shiboritate✨ Slightly refreshing, dry, acidic. It's probably the easiest to pair with a meal.

A week later, serve with pork koji. Warmed up at ♨️ 55 degrees, it is still hard. 65 degrees will open it up. It is easy to drink and the umami spreads. The miscellaneous taste disappears, and the rice flavor is enhanced.

It's a pure rice ginjo 😅 mirin. The aroma is like an old sake like Daruma Masamune. When you drink it, it is matured but also refreshing. Sourness and spiciness. Hot sake (60 degrees). Mellow aroma. Gentle flavor. My wife says it has a spicy taste 😆 Very good match with bonito tataki👍. I think the sake might be too much for Hiramasa 🤔.
I finally bought a heating device "Kanmakase" supervised by Shinkame 😆 Very convenient. It's great to adjust the temperature and let it warm up slowly. ❗️
