Mimuro Sugi Junmai Ginjo Yamadanishiki
It's been a while since I've tasted sake!
The moment I put it in my mouth, I got a sour taste, followed by a slightly melon-like taste. It was quite fruity and very easy to drink.

This elegant and clean summer sake is as if a cool breeze is trapped inside a cup.
The refreshing aroma of young melon and muscat gently rises in the mouth, and the fresh sweetness and slightly bouncing acidity spread pleasantly in the mouth.
The lightness of the taste has a strong Yamadanishiki flavor, and while it is easy to drink, it has a core flavor.
It is juicy, but not overly sweet, and is the kind of bottle that will naturally fit in at your summer table.
It is not flashy, but each sip quietly draws you in.
It is filled with the kind of fine summer happiness that you want to pour into a cool glass and enjoy slowly with seasonal dishes.

I hesitated to open the bottle because I thought it would be a waste.
As expected of Mimurosugi. The balance of umami was so good that I finished it right away.
I had Nanadoro at Kaze no Mori before, but it has a different flavor.
It is different from Kaze no Mori's which has a wild taste with a lot of acidity, but it has a calm yet delicious flavor and the bodaciousness of the Bodhi yeast is superb.
This is the wonderful thing about sake, that even with the same rice, the flavor can change depending on the brewer, which is why I like to try sake from different breweries.
It is a matter of taste, but I think I personally prefer Mimuro Sugi's sake this year.
I am sure they will release more in the future, so I would like to have more and more Nanarusui sake.

Complex aromas of grape gum, roses, ice, corn soup and rice.
Smooth, slightly effervescent mouthfeel.

Pair with simmered fresh onion and eggplant, caprese, grated silk-fried tofu, and chopped horse mackerel.
I like the non-sweet, high-end Bordeaux-like flavors and have been repeating this wine for some time now.

I was unusually approached at a liquor store and asked if I was looking for a sake. I answered that I was looking for a dry sake, and after listening to his explanation, he selected this sake for me. I don't usually drink dry sake, but even as a beginner, I thought it was a good sake.
I ended up drinking too much and was knocked out the next day...but I would like to repeat the experience.
