It's cool to look at, and is, needless to say, a summer sake. It has a fruity, melon-like flavor, and a delicious taste that will make you drink more sake...............inevitably! I can't help but have another glass!

This bottle was brewed using Nara Prefecture's "Nanarrow," a rice suitable for sake brewing, in the traditional Bodemoto brewing method that originated in Nara. It was an ambitious work that challenged us to see how far we could bring out the character of a new sake rice using an ancient brewing method. The moment I took a sip, I was struck by its clear, smooth acidity and soft, natural sweetness. The taste was familiar and refreshing, somewhat reminiscent of rum and white peaches, and was light yet juicy. Along with the acidity typical of sake yeast yeast, a "gentle wildness" characteristic of bodied yeast is faintly felt, and the layers of flavor spread out like a watercolor painting. While Nanarrow 657 from Kaze no Mori, which is made from the same Nanarrow, has a clear purity with a gaseous and sweet taste, Mimuro Sugi has a lightness with a slight complexity and a supple sense of balance. Both are "sake rice that will grow up in the future," and we could feel the difference in expression by each sake brewer. The character of Nanadoro itself is still unknown, but this was a gentle and gorgeous cup that gave us a glimpse of its potential. This sake can be enjoyed either cold or at room temperature, and I look forward to its future in Nara.

Lunch at "Sake Ponytail" which I wanted to visit on my trip to Osaka! This was my first time drinking Mimurosugi, and it was so easy to drink! It has a gorgeous taste in the mouth, but when it passes down your throat, it doesn't feel like sake, as if it were water. What is this? It was so easy to drink that if I got it in a bottle, I would probably finish the whole bottle on the spot. This restaurant is a standing bar at night. It is very popular at lunch time and the line was full all the time. I want to go at night next time!

A treasured Mimuro cedar that had been stored in the refrigerator. Aroma like white peaches. The coolness derived from the wooden vat can be felt. The taste is layered and deep with acidity derived from lactic acid. It has a silky mouthfeel with a sweet flavor. A slight bitterness is felt at the end. It is not so easy to drink, so it is drunk with care. However, it will soon be empty.

I drank it to see what it was like since it is said to be brewed using the Muromachi period method, but the taste betrayed my expectations in a good way! It was light, smooth, sweet, with a slight gasiness, and very easy to drink! 😊
