Takahashi Katsunichi-no-mikoto is a sake brewing god who resides in Miwa, and is worshipped at Katsunichi-jinja Shrine as the oldest toji in existence, and is looked up to by sake brewers throughout Japan.
Although it is a Daiginjo standard sake, it is not overly aromatic, but is the highest grade of Mimuro-Sugi sake, made with the concept of "mild aroma and fresh, clean flavor" firmly in mind.
The aroma is fresh, with an elegant fruity aroma like white peaches, juicy as if you had just bitten into a freshly harvested fruit, with a beautiful acidity and long aftertaste on the finish. It was delicious 😋.
Personally, I liked it the best among all the Mimuro Sugi varieties we compared today. Compared to Takanaga's Bodhi Hashiwado, it is more refreshing, but I could taste the umami of rice.

This sake was served cold at a restaurant near Sarusawa Pond in Nara! 100% Nara-grown rice, dewy leaf wind.
It was a refreshing yet mellow sake that I could drink more and more!

A classic low-alcohol sake brewed in Miwa, the birthplace of sake brewing🍶.
The first thing you notice is the fresh ginjo aroma that smells like ramen, and when you taste it, it is so juicy and fresh, it just pops on your tongue 🫧 It is followed by sweetness, umami, and a smooth acidity that cuts through gently 😁.
This is a very good wine!
Is the standing aroma apple? Pear? Slightly mild. From the fresh mouthfeel, it is a beautiful sake with the umami of rice, and the acidity makes it sharp and clean. I prefer it after a few days rather than right after opening the bottle.
It gives the impression of being between the Jungin Yamadanishiki and the Jun Dai Sake Mirai that we drank last year. Stable and reliable Mimurosugi🥰.

It is light but has more volume than Dio Abita.
It has a gorgeous ginjo aroma and juiciness. I love this brand because of its cohesiveness.

The guests love Sake too, this is the 3rd time for this group, but the first time to a restaurant I know, as they always treat me. I think they all enjoyed it 👍 notes are a challenge😅.
It has a strong effervescence and is moderately sweet and very gentle, so much so that I wanted to keep it in my mouth forever. I had no choice but to drink it in a four-pack because of the stock in the fridge, so my enjoyment ended soon after.
