Lately, I have been drinking only sake from Kyoto and have not had any Aomori sake at all. Then, oh well, Aomori AQE will be limited to Hijimaya this year... Toyobai, Tasake, Hachisen, and Hato Masamune... I had to buy it. So I bought them.
I guess I'll open the Mutsu Hachisen first. Here we go! The aroma is mild but sweet. The aroma is mild but sweet, with a hint of apple sweetness. The mouthfeel is a little hard. It is not as hard as Kaze no Mori, but it is hard. It has sweetness, but more than that, it has a wonderful richness and umami. It has a nice sharpness and goes down your throat well, especially in the summer. This time, I had it with bonito tataki and bracken. At first, I drank Hachisen and Hato Masamune, and both of them are indeed very unique and penetrating sakes that show the personality of the brewery!

I bought a bottle of Hachisen summer ginjo last year, which I fell in love with at first sight.
I immediately heard a nice bubbling sound when I opened the bottle. The lightness characteristic of summer ginjo from the first sip is perfect for the early summer weather. It is light but sweet, and the alcohol content is only 13%, so you can drink it in gulps, which is dangerous in a sense.
It was a good decision to buy it again this year.

Mutsu Hachisen Red Label is hard to compare with Mutsu Hachisen Red Label.
I love Ura Mutsu Hachisen ‼️
The aroma is absolutely gorgeous😊.
The taste is also juicy apple 🍎.
The sweetness is subdued compared to the red label and the bitterness in the aftertaste is a bit stronger.
