I bought it because it was something I don't usually see at the stores I go to.
The rice was developed by a sake brewery over a period of 12 years, apparently before it was registered as a variety.
The aroma was faintly sweet. The taste is mild, and the sake is sweet and tasty from the moment it enters the mouth to the throat.

The appetizer was Shinanotsuru.
The first sake was Hachisen wine yeast brewed
I paid attention to it because I thought it looked light as a first drink, and it was exactly 13 degrees low alcohol!
It tastes like white wine with a fresh acidity, and is delicious on a hot day when you want to drink it chilled!
I came here for the first time in 3 months and they had changed to a smart phone ordering style 🤔.
Mutsu Hachisen V1116 wine yeast brewed 3,520 yen
Our favorite Hachisen sake with wine yeast came to our house. ‼️
It was sweet, fruity, sour and ...... not so much to my wife's liking 💦I found it refreshing and easy to drink 😆.
I wonder if it tastes like this when mixed with white wine and sake⁉️

The brand in the lounge was renewed in September 😋.
My favorite brand is "Mutsu Hachisen" 😆.
While most of the sake is fruity,
It's a little spicy, has a strong umami flavor, and is very drinkable 😁.
Hachisen's first Yamahai brewing using 100% "Gin Karasu" from Aomori Prefecture.
It was aged for four years in a refrigerator at home.
Strong sweetness like honey.
At the same time, there is a bitter taste that comes with it.
It also has the flavor of old sake due to its maturity.
When I paired it with sardine dumpling soup, the bitterness was lost and only the richness could be felt.

Sake made from 100% Hachinohe Sake Brewery's own "Hanabukiyuki" harvested from its own rice paddies.
Sweet flavor.
A sharp taste on the tongue.
Cut by a dry bitterness.
Date of manufacture: March 2024
Cut-off date: April 7, 2024
The last bottle of August was a "Mutsu Hachisen" inexpensive special junmai that I purchased on a business trip.
When the bottle was first opened, there was a pleasant "pop" sound.
There are no bubbles in the glass, but when you take a sip, you can feel the fine gas that tingles on the tip of your tongue. It has a refreshing fruity sweetness, pleasant acidity and bitterness. The mouthfeel is quite good for a reasonably priced Tokushun.
Since it is at the special jun level, we prepared smoked gizzards and chub mackerel with black pepper as a slightly strong accompaniment. It was a luxurious last day of Hazuki.
