yuki
This one was purchased at the new Miwa Lore Storehouse on the approach to Ojin Shrine. You can drink it here, but it's a car 🥹.
It is 100% dewy leaf style. There was also a fire-roasted type, but I went for the draft.
It is made in Yoshinosugi wooden vats. It is a raw sake at 13 degrees Celsius.
The aroma is not much, but it has a refreshing herbaceousness. Oh, is it because it was made in a wooden vat?
The taste is sweet, with umami from the koji and rice. There is little acidity, but pineapple, pear, and bitterness in the aftertaste.
There is a little gas left.
