Junmai Daiginjo made with 83% Yumeko and 16% Yamadanishiki. Slightly white? Pear-like, sweet aroma of rice. Sweet and delicious. Slightly bitter taste. There is also a little sourness. The sweet and sourness is pineapple. Too sweet? I think it's too sweet at first sip, but it's good. Leave it for a while. The melon aroma increases 😍.

I went to the brewery in June here, too. The scenery of the town changes around the border of Noto Town and Suzu City. Electric poles still slanted and buildings still collapsed. It felt like there was still a long way to go. In the midst of all this, we are open for normal business from 8:00 in the morning. I am glad ☺️ Original gugumi-nomi of Suzu ware is cute 🩷. Junmai-shu, unfiltered, unfiltered, raw sake made from 100% Ishikawamon. The aroma is rather acidic. Banana, pear, yogurt. The taste is banana-like with a strong umami, but the alcohol content is 18%, so the aftertaste is dry and acidic.

A special junmai sake made from 100% Ishikawa-mon. Aroma of sweet & sour cream soda. The taste is firm and sweet with banana and pear. The aftertaste is spicy. The aroma is a little bit unsettling at the back of the bottle. It disappeared the next day.

Jungin in summer. Made with Kanazawa yeast. The basic aroma is sweet, but you can also taste acidity like pears. The acidity adds to the umami. The sweetness stands out, but the acidity is like pears or bananas. The spiciness comes afterwards. The sweetness becomes stronger when the sake is not yet warm, so it should be well chilled to refresh the palate.

In June, I visited the Okunoto area for the first time since the earthquake. I went to the Kazuma Sake Brewery in Noto Town. The urban area of Noto Town is relatively back to normal. The major sake breweries seem to have resumed sake production, but it must still be very difficult. I was looking for sake to drink at the inn, so I found a perfect size of 300 ml. It is a Daiginjo-nama sake limited to the brewery. The aroma is banana. It has a rich sweetness of bananas and pears, but the alcohol content is 17%, so the aftertaste is quite spicy. It has a refreshing cool sensation because it is alky.

Purchased at a roadside station in Himi. The brewery is close by, but we ran out of time and couldn't go there. I buy the AKEBONO series labels because I am attracted to this loose illustration... It smells like a sweet yogurt drink. The alcohol content is 13%, so it is sweet and light with a slightly bitter aftertaste. The next day the sweetness settles down and it's nice. It's better when it's cold, because when it gets warm, the banana taste increases and the sweetness stands out.

Miyamanishiki is used. Banana aroma - Tastes like banana. Sweet. Because it is an unfiltered, unpasteurized sake, it has a slightly gaseous taste. When paired with food, the bitterness stands out. After a long time, the umami taste increases. It's good 😋.

Junmai Ginjo from Omachi, Unfiltered Nama-shu. Summer sake! It's like a summer sake. ☀️ The aroma is citrus and banana. The aftertaste is bitter with grapefruit while the rice flavor is also present. Slightly gassy and refreshing.

This one was purchased at the new Miwa Lore Storehouse on the approach to Ojin Shrine. You can drink it here, but it's a car 🥹. It is 100% dewy leaf style. There was also a fire-roasted type, but I went for the draft. It is made in Yoshinosugi wooden vats. It is a raw sake at 13 degrees Celsius. The aroma is not much, but it has a refreshing herbaceousness. Oh, is it because it was made in a wooden vat? The taste is sweet, with umami from the koji and rice. There is little acidity, but pineapple, pear, and bitterness in the aftertaste. There is a little gas left.

This is an unfiltered, unfiltered, unpasteurized sake with a limited amount of ogara-mi. When the cork is opened, bubbles start to appear. The aroma is sweet with banana, cream, and grapefruit-like acidity and bitterness. Sweet - refreshing 😄This is a raw sake and lighter at 13 degrees Celsius. The aftertaste is bitter. The more corkage in the mix, the more calpis-like it is. It's like a calpis soda with a hint of citrus bitterness 😋.

Special Junmai made from 100% Ishikawamon. We got this brand, which is rarely sold outside of the prefecture, at an event to support reconstruction efforts. The major sake breweries in Noto seem to have managed to reopen their business, but others still seem to be in a difficult situation. The aroma is subdued, mainly sweet rice, with a hint of pear and lychee. Slightly pear and lychee. Strong sweetness but spicy with 17% alcohol. Thick and juicy. The sweet and spicy balance improves with time and can be drunk on its own or with snacks. Yum 😋.

I went to a brewery opening during the May holidays. I slipped in 30 minutes before the end of the event, so I could hardly taste anything 🥹 and the sales area was sold out! I waited and found some freshly bottled ones. Lucky me! This is a Hidahomare 100% limited edition. It has a sweet and sour aroma like pineapple. It also has a strong umami flavor. Sweet and sour! Because it is fresh, it has a fresh acidity and the sweetness is not too much. Beautiful dry taste. Delicious!

This one was purchased at a stand bar at Kanazawa station. I decided to drink the Gohyakumangoku, so I bought a small bottle of Yamahai as a souvenir. I wanted at least 1 gou of Yamahai. It's aluzome, isn't it? The alcohol content is 18 degrees Celsius. Omachi. The aroma is dairy-like. It smells like cheese. Then there are nuts. Quite sweet.

The first time I visited Mr. Noguchi's stand bar at Kanazawa station. This is a bottle I bought at a liquor store in Omimachi Market before that. I bought a small 300ml bottle because most of them are expensive. I heard that 2019 is the year of the rice harvest. The alcohol content is 19%, so it has a strong alcoholic taste. It also has a slightly savory aroma. It was made in 2019 or 2020 and bottled in 2024, so it tastes like it has been aged. The color is yellow. The description of the stand bar described the tingling as a white pepper flavor, and I wonder if this is like that. The flavor is enhanced when combined with konka.

This is also at the brewery store. Nice aroma - ❤️ Sweet aroma is rice, cream. The acidity is pear or pineapple. Nice aroma lingers for a long time. Refreshing flavor. The aftertaste is dry and crisp. Beautiful dry taste. Like Katsuma. It is good, but it is not my favorite type of sake. The flavor is mellower and more pronounced if you let it sit for a while.
