This one was purchased at the new Miwa Lore Storehouse on the approach to Ojin Shrine. You can drink it here, but it's a car 🥹. It is 100% dewy leaf style. There was also a fire-roasted type, but I went for the draft. It is made in Yoshinosugi wooden vats. It is a raw sake at 13 degrees Celsius. The aroma is not much, but it has a refreshing herbaceousness. Oh, is it because it was made in a wooden vat? The taste is sweet, with umami from the koji and rice. There is little acidity, but pineapple, pear, and bitterness in the aftertaste. There is a little gas left.

This is an unfiltered, unfiltered, unpasteurized sake with a limited amount of ogara-mi. When the cork is opened, bubbles start to appear. The aroma is sweet with banana, cream, and grapefruit-like acidity and bitterness. Sweet - refreshing 😄This is a raw sake and lighter at 13 degrees Celsius. The aftertaste is bitter. The more corkage in the mix, the more calpis-like it is. It's like a calpis soda with a hint of citrus bitterness 😋.

Purchased on the approach to Ojin Shrine: ❤️ The aroma is fresh acid like pineapple and sweet malted rice. It has a sweet and sour taste with a bitter aftertaste. The alcohol content is 14 degrees, light and refreshing - good for the hot weather we are having now.

Special Junmai made from 100% Ishikawamon. We got this brand, which is rarely sold outside of the prefecture, at an event to support reconstruction efforts. The major sake breweries in Noto seem to have managed to reopen their business, but others still seem to be in a difficult situation. The aroma is subdued, mainly sweet rice, with a hint of pear and lychee. Slightly pear and lychee. Strong sweetness but spicy with 17% alcohol. Thick and juicy. The sweet and spicy balance improves with time and can be drunk on its own or with snacks. Yum 😋.

Nice aroma ❤️ sweet rice, acid is pineapple or banana. It has a good flavor, but it doesn't seem sweet in comparison to the aroma. A little bitterness, bitterness and heaviness prevail. This is also a limited edition Dewa Sanzan, a kurabiraki only. Sweet rice aroma - the acidity is banana or pineapple. Nice aroma 😍. Strong umami. Refreshing and fresh. Fresh acidity like pineapple or pear with a bitter aftertaste. Well balanced with the acidity, the sweetness is not too much. Yum! ❤️

I went to a brewery opening during the May holidays. I slipped in 30 minutes before the end of the event, so I could hardly taste anything 🥹 and the sales area was sold out! I waited and found some freshly bottled ones. Lucky me! This is a Hidahomare 100% limited edition. It has a sweet and sour aroma like pineapple. It also has a strong umami flavor. Sweet and sour! Because it is fresh, it has a fresh acidity and the sweetness is not too much. Beautiful dry taste. Delicious!

This one was purchased at a stand bar at Kanazawa station. I decided to drink the Gohyakumangoku, so I bought a small bottle of Yamahai as a souvenir. I wanted at least 1 gou of Yamahai. It's aluzome, isn't it? The alcohol content is 18 degrees Celsius. Omachi. The aroma is dairy-like. It smells like cheese. Then there are nuts. Quite sweet.

The first time I visited Mr. Noguchi's stand bar at Kanazawa station. This is a bottle I bought at a liquor store in Omimachi Market before that. I bought a small 300ml bottle because most of them are expensive. I heard that 2019 is the year of the rice harvest. The alcohol content is 19%, so it has a strong alcoholic taste. It also has a slightly savory aroma. It was made in 2019 or 2020 and bottled in 2024, so it tastes like it has been aged. The color is yellow. The description of the stand bar described the tingling as a white pepper flavor, and I wonder if this is like that. The flavor is enhanced when combined with konka.

The aftertaste is dry and crisp. Beautiful dry taste. Like Katsuma. It is good, but it is not my favorite type of sake. The flavor is mellower and more pronounced if you let it sit for a while.

Purchased at a brewery store in Kanazawa. Made with Hyakumangoku No Shiro, Ishikawa's sake rice. Aroma is sweet and sour like soda. Slightly banana-like. It has some umami, but it is dry and spicy. The alcohol smell is a bit filmy, so it might be better to let it sit for a while. As expected, the corners are removed and it becomes round and mellow👍.

Moro & Mee, the signature cat of the brewery, is the label. White cat sisters Moro & Mee. They named the cat "Moromi" (lol). Sourness and umami. The taste is strong. The sourness is like banana and cream cheese. The taste reminds me of Hanaboe. It is recommended to be served lukewarm, but it can also be served cold.

Spring Blessing #2. Fresh firefly squid from Toyama! Freshly boiled in Tateyama, Toyama. Special Junmai unfiltered unpasteurized sake. The color is much yellow. The alcohol content is 18-19 degrees! The aroma has a nice banana aroma. I thought Tateyama was more dry and dry (my own image), but it has a strong umami flavor. It goes well with seafood from Toyama. ❤️ Toyama's sake is the best match for Toyama's ingredients.

The bounty of spring; a March story. Oysters from Nanao, my hometown, arrived, and just in time, I found information about their arrival on line at my favorite liquor store. A sake that goes well with oysters, made with rice grown using oyster shells and wine yeast. The acid aroma is yogurt and alcohol. A clear acidic white wine with some bitterness and astringency. It goes well with fried oysters 😍. It brings out the flavor while eliminating the smell of the sea, the oil is washed away and the aftertaste is dry. Noto best ❤️

The pelican label was the reason I got to know Onogawa. At the time, there was only one bottle left, so I passed on it, but now I see it again~! The color is very yellow! The label doesn't say, but it is an unfiltered sake. The aroma is subdued. Junmai! It has a "Junmai" feeling. More rice flavor than fruity. It is light and dry. It blends well with food when drunk while eating. It's like a "food sake".

I'm uploading a new sake I had in February now 😅. The aroma is yogurt and cheese type acidity and faintly nutty. The aroma is yogurt or cheese-like acidity with a hint of nuttiness. Freshness that only new sake can have. After some time, the aroma also has a lychee or pear-like feel to it, with a bitter aftertaste.

I bought this at the end of the year as a collaboration between KOIKEYA and Drunken Whale. As if by chance, an advertisement for KOIKEYA came across my inbox, and I immediately snapped it up 🤪. The sake has a slightly sweet aroma when you open it. It doesn't last long. The aroma became more pronounced after some time had passed. Sweet & sour like soda. It has a clear, refreshing acidity and spiciness. There may be a little bit of nigorigo. The Potatoes have a bitter taste with yuzu and sakataki, and are thick and punchy. When eaten together, the light flavor of the sake stands out. The sake alone may be a little too light, and the potato chips may taste a little strong when eaten by themselves, but when combined with the sake, they come together nicely. As one would expect from KOIKEYA👍.
