I found this one on an expedition to Shiga, too. I bought the label. If you look closely, you can see the hem of a pair of jeans! When I touched it, it felt a little rough like jeans, and the brand name is raised as if it was painted. Nice 👍. I heard it is called "Umaregara Jiyu" (meaning "born again" in Japanese). I just found out by looking it up lol It uses malic acid high productivity yeast No.77. I see, the aroma is apple! Tastes like apple🍎 cider without the gas. Sweet, but with a light bitterness and astringency in the aftertaste. Easy to drink.

Got it on an expedition to Shiga. I found a raw sake from AZM that I had encountered in Shiga before. opus" means a work number, and the first one that I was satisfied with was the 13th one. So this was the start of AZM. Made from 100% Hikone-grown mizukagami. Sweet & sour like cream soda. The acidity is pineapple-like. It is quite sweet, but has a bitter citrus aftertaste. After a while, the sweetness goes away and blends with food. Nice taste.

Also at the brewery. A sparkling wine of secondary fermentation in the bottle. It has a slight aroma of malted rice. It was a bit sizzling when I opened the bottle, but not so much that it overflowed. Sweet and sour! Lemon squash. The alcohol content is 7 degrees, so you can drink it in a gulp on a hot day! By the way, the day we drank it was 40 degrees Celsius. ☀️ The bottom part of the bottle has some oli, which increases the bitterness as it mixes.

I went to the brewery in August♪ Junmai Daiginjo made from 100% Shiga Prefecture Tamakae. Sweet and sour berry-like aroma. It has an apple-like freshness and a little bit of alcohol. But the taste is crisp and dry. The flavor increases when paired with food, so it is perfect as a food sake. I also bought an original T-shirt with a design of the brewing process 😁.

Orange aroma, just as the label implies! The taste is also orange with little acidity. The sweetness is followed by a refreshing citrus bitterness. The color is slightly whitish with a hint of gas. As you continue drinking, the taste becomes drier than expected. Mmmm.... Feel the Kujukuri wind and the setting sun. ☺️

Then Aki. The host is Kojima So Honten. 100% Dewa Sanzan, No. 10 yeast is used. The aroma is sweet rice. The acidity is cream soda. The taste is not as sweet as expected. The acidity is effective and a little gassy, and there is a bitter aftertaste, so it is a refreshing dry soda. Much lighter when lukewarm.

I missed posting this, so it is in a drinking contest state. This is Mitsuo Yamakawa 2025 Haru-Aki's triple pitch. First, Haru. The host is Mitobe Sake Brewery. Banana - strong sweet aroma. The gasiness is also very pleasant. The taste is sweet, but the bitterness and pungency come first rather than the sweetness. The sweetness just lingers on the tongue. The flavor increases when combined with food. The next day, you can still taste the softness. The umami taste is enhanced even if it is left as it is.

Comparison of Edo Kaikyo drinks. This is Edo. It is said to be made with Tokyo-grown rice and 100-year-old yeast, said to be the oldest in Japan. The aroma has a hint of acidity. Banana and pear. Brewing sake in a building in Tokyo's 23 wards with Tokyo tap water. On a hot and humid day in July, I went to the brewery store to find out what kind of place it was. It was in a cozy building in a narrow alley off a main street. They make sake in a place like this? We compared "All Tokyo" and "All Edo" from Edo Kaijo. First, Tokyo. Tokyo yeast is collected from bees in Hibiya Park. The aroma is sweet vanilla. The aftertaste is spicy with a hint of sourness. There is little bitterness. It is crisp and dry with a nice crispness.

Junmai Daiginjo made with 83% Yumeko and 16% Yamadanishiki. Slightly white? Pear-like, sweet aroma of rice. Sweet and delicious. Slightly bitter taste. There is also a little sourness. I went to the brewery in June here, too. The scenery of the town changes around the border of Noto Town and Suzu City. Electric poles still slanted and buildings still collapsed. It felt like there was still a long way to go. In the midst of all this, we are open for normal business from 8:00 in the morning. I am glad ☺️ Original gugumi-nomi of Suzu ware is cute 🩷. Junmai-shu, unfiltered, unfiltered, raw sake made from 100% Ishikawamon. The aroma is rather acidic. Banana, pear, yogurt. The taste is banana-like with a strong umami, but the alcohol content is 18%, so the aftertaste is dry and acidic.

A special junmai sake made from 100% Ishikawa-mon. Aroma of sweet & sour cream soda. The taste is firm and sweet with banana and pear. The aftertaste is spicy. The aroma is a little bit unsettling at the back of the bottle. It disappeared the next day.

Jungin in summer. Made with Kanazawa yeast. The basic aroma is sweet, but you can also taste acidity like pears. The acidity adds to the umami. The sweetness stands out, but the acidity is like pears or bananas. The spiciness comes afterwards. The sweetness becomes stronger when the sake is not yet warm, so it should be well chilled to refresh the palate.

In June, I visited the Okunoto area for the first time since the earthquake. I went to the Kazuma Sake Brewery in Noto Town. The urban area of Noto Town is relatively back to normal. The major sake breweries seem to have resumed sake production, but it must still be very difficult. I was looking for sake to drink at the inn, so I found a perfect size of 300 ml. It is a Daiginjo-nama sake limited to the brewery. The aroma is banana. It has a rich sweetness of bananas and pears, but the alcohol content is 17%, so the aftertaste is quite spicy. It has a refreshing cool sensation because it is alky.

Purchased at a roadside station in Himi. The brewery is close by, but we ran out of time and couldn't go there. I buy the AKEBONO series labels because I am attracted to this loose illustration... It smells like a sweet yogurt drink. The alcohol content is 13%, so it is sweet and light with a slightly bitter aftertaste. The next day the sweetness settles down and it's nice. It's better when it's cold, because when it gets warm, the banana taste increases and the sweetness stands out.

Junmai Ginjo from Omachi, Unfiltered Nama-shu. Summer sake! It's like a summer sake. ☀️ The aroma is citrus and banana. The aftertaste is bitter with grapefruit while the rice flavor is also present. Slightly gassy and refreshing.
