This is also at the brewery store. Nice aroma - ❤️ Sweet aroma is rice, cream. The acidity is pear or pineapple. Nice aroma lingers for a long time. Refreshing flavor. The aftertaste is dry and crisp. Beautiful dry taste. Like Katsuma. It is good, but it is not my favorite type of sake. The flavor is mellower and more pronounced if you let it sit for a while.

Purchased at a brewery store in Kanazawa. Made with Hyakumangoku No Shiro, Ishikawa's sake rice. Aroma is sweet and sour like soda. Slightly banana-like. It has some umami, but it is dry and spicy. The alcohol smell is a bit filmy, so it might be better to let it sit for a while. As expected, the corners are removed and it becomes round and mellow👍.

Moro & Mee, the signature cat of the brewery, is the label. White cat sisters Moro & Mee. They named the cat "Moromi" (lol). Sourness and umami. The taste is strong. The sourness is like banana and cream cheese. The taste reminds me of Hanaboe. It is recommended to be served lukewarm, but it can also be served cold.

The kind that is filled with tight gas but can be easily corked. Melon - Sweet melon soda. The bitter taste comes when the cork is mixed in. It's sweet, soft, and easy to drink, but the alcohol content is 17 degrees. Be careful!

Spring Blessing #2. Fresh firefly squid from Toyama! Freshly boiled in Tateyama, Toyama. Special Junmai unfiltered unpasteurized sake. The color is much yellow. The alcohol content is 18-19 degrees! The aroma has a nice banana aroma. I thought Tateyama was more dry and dry (my own image), but it has a strong umami flavor. It goes well with seafood from Toyama. ❤️ Toyama's sake is the best match for Toyama's ingredients.

The bounty of spring; a March story. Oysters from Nanao, my hometown, arrived, and just in time, I found information about their arrival on line at my favorite liquor store. A sake that goes well with oysters, made with rice grown using oyster shells and wine yeast. The acid aroma is yogurt and alcohol. A clear acidic white wine with some bitterness and astringency. It goes well with fried oysters 😍. It brings out the flavor while eliminating the smell of the sea, the oil is washed away and the aftertaste is dry. Noto best ❤️

One more Onogawa. Little devil label. Slightly banana and pear type aroma. Sukkiri. Gentle and smooth on the palate. The color is slightly yellow. The next day it tastes better. It is dry, but it has umami and sweetness, and is easy to drink, so is it a little devil?

The pelican label was the reason I got to know Onogawa. At the time, there was only one bottle left, so I passed on it, but now I see it again~! The color is very yellow! The label doesn't say, but it is an unfiltered sake. The aroma is subdued. Junmai! It has a "Junmai" feeling. More rice flavor than fruity. It is light and dry. It blends well with food when drunk while eating. It's like a "food sake".

I'm uploading a new sake I had in February now 😅. The aroma is yogurt and cheese type acidity and faintly nutty. The aroma is yogurt or cheese-like acidity with a hint of nuttiness. Freshness that only new sake can have. After some time, the aroma also has a lychee or pear-like feel to it, with a bitter aftertaste.

I bought this at the end of the year as a collaboration between KOIKEYA and Drunken Whale. As if by chance, an advertisement for KOIKEYA came across my inbox, and I immediately snapped it up 🤪. The sake has a slightly sweet aroma when you open it. It doesn't last long. The aroma became more pronounced after some time had passed. Sweet & sour like soda. It has a clear, refreshing acidity and spiciness. There may be a little bit of nigorigo. The Potatoes have a bitter taste with yuzu and sakataki, and are thick and punchy. When eaten together, the light flavor of the sake stands out. The sake alone may be a little too light, and the potato chips may taste a little strong when eaten by themselves, but when combined with the sake, they come together nicely. As one would expect from KOIKEYA👍.

The aroma is cream soda type, but it also has a strong alcohol taste, probably because it has 17% alcohol content. Acid + bitterness + a little astringency. Little sweetness. There is a little gas. When I drank Tianqing before, I had an impression that it was more umami because it was a future sake... But it seems to have sweetness when exposed to air. As expected, the flavor increased the next day. Ah, it was orikara! I mixed it with orikara and it got more umami.

I didn't have the energy to go to my favorite liquor store, so I went to a nearby Ricaman and the only sake they had was comet 😅. They had a huge variety. The label doesn't say, but I'm pretty sure I chose the one made with Hachitan-nishiki... A little yellow. Like sweet rice. Not too acidic, refreshing and light. But it is thick.

Long time no see, Mr. Machida. It is directly pumped from Gohyakumangoku. The sweet & sour aroma is like cream soda. There is still some gas and it is slightly cloudy. Aroma of oli. The sweetness comes first, then there is a bitter taste and it is crisp and refreshing. It is like a bitter cream soda with a bit of lychee and pear added.

It's hiyaoroshi, but the one I got from my parents' house at the end of the year. I haven't had much sake from Hiroshima. This may be the first time I've had a long drink of it. It has a sweet pear-like aroma. It tastes sweet, too. But it also has a sharp and refreshing acidity. The aftertaste is clean and has a good bitterness. The taste does not change much even after a few days. The aroma and the sweetness lasts. Yummmm 😍!

It has been a while since I last saw Houou Mita. It uses rice called "Yume Sarara" grown with water from Nikko. It has a nice aroma, but it is more alcohole than the impression of the aroma. Maybe it is because the alcohol content is high at 16 to 17 degrees Celsius. It is refreshingly spicy with sweetness and acidity. It has a thickening effect, but it is light. The next day. The aroma is mild and banana-like, and the taste is mellow.

This one is also from Hokkaido. An ordinary Junmai Daiginjo. Lychee, pear, strong aroma. Nice aroma. ❤️ The first sip is sweet! The taste is also strong. But it quickly recedes and the spiciness and bitterness come in. Yum! A little gassy? A nice tingle on the tip of the tongue. Next day, the good aroma continues. The sweetness rounds out and the pungency is well balanced. Yum 😋.
