Long time no see, Mr. Machida. It is directly pumped from Gohyakumangoku. The sweet & sour aroma is like cream soda. There is still some gas and it is slightly cloudy. Aroma of oli. The sweetness comes first, then there is a bitter taste and it is crisp and refreshing. It is like a bitter cream soda with a bit of lychee and pear added.

Sweet aroma. Cream, rice. Slight acidity is banana, pear type mellow. Sweet & tasty rice. The acidity is thick like a sweet yogurt drink. A little bit cloudy. The aftertaste is sharp and dry, bitter and savory.

It's hiyaoroshi, but the one I got from my parents' house at the end of the year. I haven't had much sake from Hiroshima. This may be the first time I've had a long drink of it. It has a sweet pear-like aroma. It tastes sweet, too. But it also has a sharp and refreshing acidity. The aftertaste is clean and has a good bitterness. The taste does not change much even after a few days. The aroma and the sweetness lasts. Yummmm 😍!

Sweet nice aroma. ❤️ Cream soda type with some acidity. It tastes sweet and sour, but has a delicious rice flavor in the aftertaste. There is a slight gaseous feeling and a little cloudy.

It has been a while since I last saw Houou Mita. It uses rice called "Yume Sarara" grown with water from Nikko. It has a nice aroma, but it is more alcohole than the impression of the aroma. Maybe it is because the alcohol content is high at 16 to 17 degrees Celsius. It is refreshingly spicy with sweetness and acidity. It has a thickening effect, but it is light. The next day. The aroma is mild and banana-like, and the taste is mellow.

Junmai Ginjo of Suzukagawa from Saku no Kura. Sweet and sour aroma like calpis. The first sip is sweet and mild, like pear or banana. The aftertaste is sweet, but the acidity is like that of calpis. The next day. The aroma is more banana-like.

This one is also from Hokkaido. An ordinary Junmai Daiginjo. Lychee, pear, strong aroma. Nice aroma. ❤️ The first sip is sweet! The taste is also strong. But it quickly recedes and the spiciness and bitterness come in. Yum! A little gassy? A nice tingle on the tip of the tongue. Next day, the good aroma continues. The sweetness rounds out and the pungency is well balanced. Yum 😋.

This is another one I brought back from Hokkaido. The aroma is slightly elegant pear. Yum! ❤️ The acidity is more effective than I expected. Well-balanced dry taste. It has umami, but it's still refreshing. It's a little gassy, but it's still very fresh. The aroma is more like a later one. Banana and pear flavors come out, but the mouthfeel is clean.

I drank this during the year-end and New Year's holidays. When I went to Hokkaido in September, I went to Midorigaoka warehouse in Kamikawa-cho. I didn't have a chance to go there very often, so I brought back a bottle of expensive Junmai Daiginjo Shizukutori. When I opened it, it just smelled so good. Bananas, pears, sweet cream. Maybe a little cloudy. The first sip is sweet! But the aftertaste is clean and refreshing. There is no cloying taste, and the impression is clean. I think it's a little gassy. Yum! ❤️❤️ I drank half of it in my usual Riedel Daiginjo glass and took the rest to my parents' house. I drank it with a small sake cup while eating sukiyaki, and the impact of the first sip was not so much sweetness. It felt clear, clean and dry. The first sip of the wine changes depending on the snack and the glass. But the nice aroma lasts for a long time. It was so good 😍.

It says to be careful when opening the bottle, but it opened just fine. There is a little gas left. It is sweet! The sweetest I've had this year. Melon! Melon juice! The aftertaste is sweet too. It's good, but I wish it was a little less sweet. After a week or so, the noticeable sweetness has subsided.

Hosted by Otokoyama Shuzo. Aiming for traditional dry taste. The aroma is of yogurt or cheese. The color is quite yellow. Basically, it is dry with acidity, but it also has a strong umami and sweetness, so it is more umami than what I would consider traditional dry. After a week, the aroma became more banana-like and the flavor increased. The image of the taste has changed. Is it because my cold is gone?

I had this one in September, too, but I got in line with Fuyu. The host is Kojima So Honten. They use more koji as in the past. The aroma is rather acidic and yogurt-like. There is little sweetness. The taste is strong. I thought that more koji would increase the sweetness, but it has a strong acidity and umami. It is dry with umami. The sweetness and thickening comes the next day.

Talking about hiyayogoshi now 😅. The aroma is a little savory. It is smooth and silky. The acidity is also effective. The savory aroma was softened the next day, and the whole flavor became cohesive.

Urazumayama! Aroma of fresh acidity like lychee. Sweet and sour with a refreshing bitterness in the aftertaste. Slightly piquant and gassy. The juicy thickening is lychee and pear, but the acidity also gives it a rummy taste. It's good 😋.

Next was Kitashizuku 45, 100% Kitashizuku with a milling ratio of 45%. The aroma is slightly pear. The taste is elegant and not dull. The aftertaste is dry and refreshing. Well balanced. ❤️ I love the sake here 😍. I wonder if the taste is the same as in Nakatsugawa? I know it's not easy to make the same thing when the location changes and the water changes, but I wonder if it was similar?

Next was Aizan 60, made with 100% Aizan and 60% polished rice. It has umami flavor, but it is surprisingly refreshing. The aroma is not so strong, more of an alcoholic smell. It is juicy like a pear or melon, but clean and dry. Before I drank it, I had the opposite image of Comet and Aizan. This one is more refreshing and the comet is sweeter.

I had a chance to visit Hokkaido in September, and although I could not go to the brewery, I just bought some sake. The brewery was originally located in Nakatsugawa, Gifu, and moved to Higashikawa-cho, Hokkaido. I never drank it when it was in Nakatsugawa. I picked up three kinds. The first one is Junmai Ginjo Comet 55, which is made from 100% comet and has a rice polishing ratio of 55%. Sweet nice aroma: ❤️ It tasted like a sweet pear at first. Sweet and sour, thick and juicy. But the aftertaste is clean and dry. Oh, yummy😍.

This was also purchased at Noboru Sake Shop. I looked at it carefully and found that it was a new sake and had been laid up for 8 months since December 2023. I heard that an acquaintance of mine who is crazy about Jyushidai and Shinshu Kamerei goes all the way from Nagoya to buy this Shinshin. I thought it would be sweet and rich, but the taste was different from what I imagined. The aroma is like sweet cream, freshly cooked rice, and baked sweets. It has a slight gassy feeling. It is thick but more bitter than sweet. If you give it some time, the sweetness will come out. It doesn't taste like sweetness. I wonder if the same brand has different tastes depending on the product.

Since I was in Tenri, I decided to try some local sake. It is said that the brewery makes Tenrikyo's sacred sake. They also make a good Nara-zuke (pickles). Inanohana is a new brand launched in 2020. With its stylish ink design and lapis lazuli-colored bottle, I totally bought the label. Sweet and nice aroma♪ Rice, cream and pear. Quite sweet and sour, with a strong flavor. There is also a bitter aftertaste. Fresh and good 😋. Best as a food wine as it is lightly thickened and blends well with food: ❤️
