The manager says that this is a rather rare sake even at Ezonokuma. Indeed, the blue bottle and unfamiliar label! It was released from the brewery in July, but it was too long in coming, so I finally opened the bottle now. It has a pleasantly moderate sweetness and a throat-splitting acidity rather than the freshness characteristic of nama-zake. The day after opening the bottle, the acidity mellows out, making it even easier to drink.
