A drink I had at a wonderful yakitori restaurant with a relaxed atmosphere in an alley in Asagaya.
Normally, I would not be so keen on dry sake, but the names "Chokaizan" and "Akita" attracted me, so I ordered it, and to my surprise, it was the right choice.
It was a refreshing sake with a great taste of rice, perfect to be served with yakitori and a bowl of chicken zosui (rice with chicken) at the end of the meal.
I think it is probably best to drink it with soy sauce or soup stock, rather than at the beginning of the meal.
Today we have Aizu red meat horse sashimi with spicy miso...
So, I gathered up all of my husband's aged sake, sake made from pure sake, and old sake from around the house and researched.
Normally, I prefer refreshing sake, but these seem to go well with dark miso and smelly food, so I studied them 📝.
It has a good balance of sweetness, bitterness, and umami, and is deep and delicious.

This year, I found out that I am growing well... I guess it's a growth spurt 🤣.
I know I've said the same thing before, but this is a deliciously spicy sake!
It's pretty dry but has a strong umami flavor.
This one is dry but I like it 🥰.
