The aroma is somewhat subdued, but it has a gorgeous aroma typical of Chokaizan, with a freshness and a slight chilli. Generally, it is a sweet type of sake, but among Chokaizan wines, it is a well-balanced type. I'd like to drink a draft of this... **☆☆☆☆☆

Chokaizan Bespoke Hiyoroshi Junmai Unfiltered Unrefined Genshu September 6, 2025 Kagataya Sake Shop 3080 yen The aroma is not so strong, but it has a tropical fruit aroma, minus the slight alcohol and rubbery aroma. It has a carbonation on the palate, and the taste is robust and calm, with umami and bitterness. The mouthfeel is hiyaoroshi. Other than the aroma, there are no negative impressions in the taste or lingering aftertaste. It has a full-bodied mouthfeel, but also goes well with tsumami. When heated, it has a raisin-like aroma and a soft sweetness that spreads with a crisp finish.

They let me taste this one too 😊. When I think of Akita Sake Komachi, the first thing that comes to mind is that of Tasake, but this one had a good acidity and was sharp, clean and delicious. I did not drink them at the same time, so this is just an image 🧠.
