"Honkara" or "Honjozo Karakuchi".
Soft and round mouthfeel. Flavor is mild at first, becomes quite spicy and peppery as the finish carries on. All in all a very nice drink and one that could accommodate foods quite well.
"Silver Mountain" Yamahai Junmai
Full and round mouthfeel. Very flavorful and full bodied. Notes of plum and currant, with strong acidity and alcohol through the finish. A nice drdrink and would pair well with food.
"Noble Arrow" Tokubetsu Junmai
Mouthfeel is soft and silky, very clean. Nose is sweet, with notes of bubblegum. Normally not my thing but the flavor is quite different. Flavor is full, but not overpowering. Notes of stone, umami lingers, slightly minty finish. Finish hangs for a while given how light overall the drink is.
Overall I like this drink a lot. May be overpowered by many foods though.
Ginjo Nama Genshu
Full bodied with a thick mouthfeel. Nose is full with notes of forest floor. Strong flavor on the palate of mushroom, umami, plum. Finish is clean with alcohol.
I'd say a food-favored sake but definitely a nice pairing.
I don't normally drink Nigori but this one looked nice. Beautiful label and presentation, not too cloudy. On the palate it is very forward and flavorful, alcohol straight from the start with melon, lycee, pear, and straw. Hot all the way and leaves a strong residual flavor of metalic bitter. All in all a nice drink and definitely one to pair with food for me.
Ordered in a restaurant and was very pleased. Full bodied, dry, and delicate. Had good dimensionality front start to finish. Would absolutely get it again, and I did that evening.
Rice: yamada nishiki and akebono.

Opened after having chilled, I get yeast on the nose. Texture is smooth and cool, flavor hits quickly. Banana and pear, with a bit of funk. Alcohol and acidity is present and carries through the finish.
I don't love the bottle and presentation, feels gimmicky. That said, the sake isn't bad and I'll return to it after its aired for a while.
Strong nose of alcohol and a bit of sweetness. Thin texture and flavor up front but deepens into a soft, warm fruity quality with marshmallow on the finish. No burn or acidity, very smooth. Was much more pleasant after having aired overnight.
Soft and fragrant at first open room temp. Deep melon and rose flavor with silky texture. Full bodied on the palate. Very easy finish and a pleasant drink.
Very light and watery on the front with subtle flavor following. All together very quiet and smooth. An incredibly understated drink, and one that I think would be overpowered by most foods. That said, by itself it is delicious.
A fruit forward and pungent nose. Very balanced flavor and texture. Fruity, dry, notes of quince and watermelon. Finish is smooth with a hint of alcohol but the flavors carry. Very pleasant.
Rice: Yamada Nishiki, Gohyakumangoku
Opened room temp. Bottle says to drink room temp or warm while I usually drink cold. May not refrigerate after open.
A very rich, funky, spicy drink. Soft texture on the front. Funky, earthy flavor with black pepper on finish. Lots of depth. I can see how drinking cold would mask the flavor.
Opened and drank room temp. Very full flavor on the front, big cantaloupe and melon, full texture. Finish is lingering and acidic with a hint of bitterness. Soft and dry all around. A pleasurable drink. Will try again when cold.
Drank room temp. Round and slightly sweet texture, but very smooth. Long finish with very little acidity or alcohol. Flavor is full bodied and, while a bit sweeter than what I'm used to, not sugary. A pleasant and easy drink.
Clean and smooth texture, almost rain like. Flavor is light up front but deepens with green apple and a smooth acidity. Finish is very clean with some lingering tartness and bitterness, not unpleasant. All in all an excellent drink.
A very nice and balanced drink. Full bodied flavor and a rich texture, I get lots of lychee. melon, peach though nice and dry. Finish is pleasant and smooth. A great sake and best chilled the second day.
Nicely fruit forward, earth and potato, with a good balance of flavor and texture. My friend says "when you're planting tubers, the smell of the dirt and greenery." Rich and savory. A great drink.
Light but noticeablely sweet nose. Smooth and soft texture, clean, light fruit with some funk and acidity. A nice drink but a tad too acidic/alcohol flavored for me on the whole.
