Tasted chilled. A good and round drink, very approachable with food. Full bodied but not too cloying, dry, with a full flavor of plum and bitterness.

Tasted very chilled. Nose has a yesty funk to it. A round and full drink, almost wine like, with a subtle sweetness to go with the brighter melon. A nice drink that seems versatile.

Tasted very chilled. Nose is full of umami and funk. Flavor is full as well but balanced. Texture is silly smooth and finish is restrained. Mushroom and forest floor all the way through.

Tasted slightly chilled. Nose is funky and yeasty. Flavor is strong with umami and mushroom, with pepper spice on the finish. Undertones of banana cream. A pleasant drink and one that would pair well with a wide variety of things.

Tasted very chilled. Nose is subdued, perhaps from the chill, with a hard synthetic note. Flavor is bold and forward, with overtones of ripe cantelope, plum, and dried cherry. Texture full and smooth. Finish is long and carries the synthetic flavor again. I will revisit it after its been open a while.

Opened slightly chilled. Nose is sweet: bubblegum and cotton candy. Flavor is full and pushes harder at the finish. More bubblegum with some thin cherry and a full finish. Texture is thick and lingers.
Not my favorite by itself but would be better with food.

Big nose of cherry. Flavor is forward and very cherry/orange driven. Texture is light and thin, with a quick and easy finish. Very drinkable.

Not much on the nose. Flavor is very bold up front, with earthy tones and brief but forward melon. Finish is quick but alcohol lingers. A nice drink and maybe best with food.

Nose is flavorful of melon and rose. Mouthfeel is round and full, with notes of apple, banana and a pronounced bitterness on the finish. It is quite pleasant all in all.

Tasted chilled. Very mild flavor up front with a smooth and clean texture. Finish is mild as well and heats up pepper at the end. An excellent table sake for sure.

Tasted chilled. Thin texture at first with strong watermelon and cantelope flavor that moves into brown sugar and a bit of cotton candy. Finish is full and sweet. I think it will relax and expand a bit with time open.

Tasted very chilled. Smooth and clean texture. Flavor is bold but not overpowering. Notes of quince, celery, and a soft finish. A very pleasant drink.

Tasted chilled. Very light bodied and smooth. Lychee, melon, apple, and bright citrus notes moves into deeper umami and roasted hazelnut. Acidity and alcohol on the edge of the palate. A nice drink and very smooth.

Thin and clean texture. Flavor is forward and crisp, with notes of raspberry, cucumber, bubblegum, and almond paste. Finish is fast and clean.

Had once before but didn't take notes on first open. Tasted slightly chilled. Lots of mushroom and umami flavor right up front. Smooth and thick texture, with a mellow peppery finish. Undertones of eclair all the way through. Very drinkable.

"Shimizu-No-Mai"
Full flavor up front of melon and black pepper and coconut. Texture is smooth and full bodied. Very well rounded and not too sweet. An excellent drink by itself but full enough to have with food.

Flavor is pretty mild up front but comes on stronger. The bottle says aloe and I wouldn't have thought of it but I see it now. Finish is tart and warm, with cherry and plum. A relatively full bodied drink, I wonder if it would do well by airing for a while. Also may be better colder.
All in all a nice drink and one I'd have with food.

"Kijuro" Tokubetsu Honjozo
Tasted chilled. Nose is full, green apple and melon. Flavor is up front, green apple and plum, with a woodsy straw finish. Finish tapers into alcohol and light plum.
All together a good drink and one that would be pretty versatile.

"Genbei San no oni koroshi"
Tasted chilled. Mild flavor and light texture. A bit of mushroom and forest floor, umami, dark plum. Soft finish. Really a mild drink with a deep quality that I kind of enjoy.
