In the mouth, there is a fresh gasiness, a refreshing sweetness, and the umami of rice slowly spreading out, with a good bitterness at the end. It is more refreshing than expected. It has a stronger and rougher image than the Miyamanishiki straight kumi that we drank last time. Next, we paired it with a kinchaku tamago (deep-fried egg). I remembered how well the spiced curry🫚🍛 and nigori sake went together at a sake🍶go-around pairing in Okayama and tried to recreate it at home😊. Let's get right to it. The standing aroma is mildly sweet with a hint of lactic acid and koji. The aroma is not as strong as I expected. In the mouth, there is a strong sense of gas and a moderate sense of koji, and the sweetness is more subdued than the sake degree and Machida's image. It has a crisp finish with umami and a hint of bitterness. Serve with spiced curry. I wondered what would be good to pair with the first anglerfish I bought at my favorite Hoshikawa fish store 🤔 and chose this one👍. Let's start with the first sip. The nose is fresh and lightly acidic with a hint of citrus. The sweetness in the mouth is refreshing, and the sourness is reminiscent of mikan 🍊 and the bitterness of eating the peel. I first tried it with anglerfish and tomo-aye. The tomo-ae itself was very tasty, but the combination with the sake was so-so. I think heated sake would be a better match. Next, I served it with the sakekasu-marinated musuko (fish roe). The salty taste of the musuko and the unique flavor of the sake lees matched well with the Hatsushibori Ona 😁.
