May: Higashitsuru Junmai Ginjo-shu Unfiltered Nama-shu & Satsukuchiman Junmai Daiginjo-Once Fired! Beautiful ginjo aroma. The sweetness is mild. The acidity is strong. Bitterness can be felt. It was the first brand I drank from the hanpukai, but it was very tasty.

From the same Aomori Prefecture as Toyobai's Hana Raft, this is a sake with the same flowery spirit.
The aroma and taste are similar, spring-like and fruity, but Tasake is lighter and slips in more smoothly.
It does not have the sweet heaviness and dullness of Toyobai, so it can be enjoyed with food in a versatile way, but at worst, it may have a diluted taste.

Soft and gentle aroma, if I had to guess, it would be muscatelike.
The mouthfeel is soft sweetness, umami, and acidity (which come out in this order), with a pleasant balance.
The rest of the drink has a moderate sweet and sour aftertaste, and it finishes clean and refreshing.
As the name suggests, it is a gentle sake, and is a perfect food sake for everyone.
The alcohol content is a gentle 13 degrees.
It is so delicious that I am sorry I didn't know the brand name until I bought it!

My wife was so angry that I did not attend my first drinking party after the transfer 😃I need to reduce the amount of sake in the fridge. Now, Hayaseura and Sakahomare, which I have not seen very often. The aroma is mild. The sweetness, acidity, and alcohol are well felt. No bitterness at all. Looks delicious even when heated 🤤.
