The aroma of koji (malted rice) is subtle, and in the mouth, there is not much of the carbonation (shuwashu) characteristic of nama-shu, but rather a full flavor and the deliciousness of the rice.
Actually, I went to the store for [Sagaminada Tokubetsu Junmai Shu Dry Oorigarami], but it was sold out😭.
So, I checked again and decided to go for this sake, which was my first encounter with this brand.
I was expecting to find more of the same brand, but I was not disappointed... 🤗

On 20221210, we came across a Junmai Ginjo, fire-brewed, 100% Yamadanishiki, 50% polished rice, 16% ALC, but decided to register it as new since it is an unfiltered nama-shu 🤗.
Although it is a nama-shu, I think it is a crisp, slightly dry sake with a good balance of acidity and bitterness, with little stimulation that tingles on the tongue.

On 20221210, I came across a Junmai Ginjo, fire-brewed, 100% Yamadanishiki, 50% polished rice, 16% ALC, but decided to register it as new since it is an unfiltered nama-shu 🤗.
Although it is a nama-shu, I think it is a sharp and slightly dry sake with a good balance of acidity and bitterness with little stimulation that tingles on the tongue 😋.

SHUWACCHI! I thought to myself, "Is this an Ultraman sake...?
Ori is settling at the bottom, so I opened the bottle first, took the pressure off, corked it again, and gently stirred the ori before pouring it into a glass 🥰.
The ori is bigger and more solid than I expected 😅.
On the palate, I think it's a sweet sake with a slight tingling carbonation characteristic of nama-shu, followed by a mild sweetness 😋.
After purchasing it, I had divided it into 2 four-pack bottles and 2 two-pack bottles and kept them in the fridge, so I had the top clear in different bottles, leaving the ori at the bottom 😃In the mouth, the mellowness of the ori faded and the taste became more tingling, which is characteristic of nama sake 😋.
The tingling sensation gradually disappeared as I poured it into a glass and let it sit for a while 😱.
I recommend tasting the top clear and the top clear twice as soon as possible 🥰.

On our first encounter, 20200117, the label was black letters on a white background, but this purchase had dark blue letters on a white background. It may be the same sake with a new label, but I registered it as new just to be sure.
The aroma is fruity even though it is pure rice.
In the mouth, you can taste the umami and dry flavor of rice, followed by a well-balanced spread of bitterness and acidity 🥳.

It is a junmai sake with a subtle aroma and a soft taste with a slight stimulation on the tongue.
The acidity and slight bitterness spread in the mouth in good balance afterwards.

Although it is pure rice, the aroma is somewhat fruity...but it is different from the fruity ginjo aroma, and there is a slight aroma that I have not experienced before😅.
When you take a sip, you can feel the umami of rice, and the well-balanced acidity and bitterness (astringency) spreads, and it is a slightly dry, crisp and delicious sake!

It is a dry sake with a crisp, light, and refreshing taste of rice.

We first enjoyed it at room temperature. It was a slightly dry sake with a slight bitterness and umami from the rice in the mouth.
When served warmed (top-heated or hot), the slight bitterness disappeared and it became a refreshing, slightly dry sake.
The next day, I had some frozen puffer fish fins left over, so I served them with fin sake. After defrosting the frozen fins and searing them a little, I put them in a glass and poured in the sake, which I stopped just before boiling 🤗.
The taste and flavor of the broth from the fins was transferred to the sake, and the alcohol was slightly reduced, resulting in a well-balanced and delicious fin sake 😋.

The ginjo aroma is very subdued, but when you take a sip, the lychee-like acidity and aroma spread through your nostrils 🥰.

Kitajima Sake Brewery has many unique labels, and we found one that is perfect for warming sake in winter.
There was a Mutsuki ver (Senbon-Nishiki, 88% polished rice ratio, 15% ALC, 24.01%) with the same [heated toad], but I selected and purchased the 70% Omachi.
First, it was served cold (room temperature).
It is a clear and dry sake with a slight sourness in the mouth and a bitter taste when rolling around in the mouth!
Next, we had it hot (kamikan or hot sake).
The acidity disappeared and the bitterness softened, making the sake even more refreshing and dry.

First, I gently turned the bottle to even out the lees, then poured it into a glass and enjoyed the thin, cloudy orikarami.
