Junmai Ginjo Unfiltered Nama Shu
⭐️⭐️⭐️⭐️ 100% Yamadanishiki
Polishing ratio 50%, ALC 16%.
On 20221210, I came across a Junmai Ginjo, fire-brewed, 100% Yamadanishiki, 50% polished rice, 16% ALC, but decided to register it as new since it is an unfiltered nama-shu 🤗.
Although it is a nama-shu, I think it is a sharp and slightly dry sake with a good balance of acidity and bitterness with little stimulation that tingles on the tongue 😋.
