First impression: light, with an aftertaste of melon. Dry, sharp and bitter. When paired with Hokkai octopus wasabi, it has a sweetness that can be enjoyed slowly. ☺️ 🤔 Satsuki, the waitress, says it is better to drink with sake only than to eat with food.

Superior 😆 Umami and sweetness come first, followed by a moderate acidity to kick it up a notch. A little spicy pokari. It's delicious. The sweet potato stew is delicious 😋.

It is freshly pressed and has an alcohol content of 20, so it is a bit harsh, but goes in easily. Sourness, spiciness, and sharpness. I could have compared it with a daiginjo, but due to budget constraints, I decided to just drink this one 😅and the suigyoza nabe warmed me up 😆.

Strong umami, with some sweetness. It has a more relaxed atmosphere than the first shibori-nama sake, so you can go easy on it 👍.
