Shinkansen bar on the way home from a business trip to Tokyo. The Daishichi Sake Brewery's website proclaims it to be an "eternal standard," so I guess they are very proud of their work. The sake rice is Gohyakumangoku, etc., and the rice is super flat polished to 69%. It has a mild taste with a modest assertiveness, and it is a sensation that easily penetrates the body after a long day. I am sure it has been well-loved in Fukushima for many years. It made me want to go to Fukushima. Thank you for the food.

The secret sake I've been saving until the new year's holiday. Let's open it up! I guess I was lucky in the lottery in 2021, but I didn't expect to win. It has a relatively mild aroma of lactic acid and citrus, typical of No.6, and a slight scent of wood barrels. I feel so rich... I could feel a hint of gas and a pleasant sweet acidity. It is neither strong nor weak, but exquisite. The aftertaste is over before you know it. The glass was empty in a flash. Surprisingly uncluttered and fragrant sake. It was the most expensive sake I'd ever had, and yet it was so easy to drink, so fragile...
