There is no gasiness, and the taste is whey-like with a strong lactic acidity. It was so easy to drink that you could not feel the alcohol.

ことりWe selected this Junmai Daiginjo from the refrigerator to go with scallops and tuna sashimi, and it was the only one in the tank that was made using Aomori yeast "Jyo" as the raw material rice.
The label design gives it a classical image...but there is no gasiness.
The top aroma is a gorgeous ginjo aroma like sweet melon and pear, and the aroma reminds of a deep forest behind the sweet fruitiness and the full flavor. Is it sweet? The citrus-like acidity is in harmony with the clean aftertaste.

I'd like to enjoy the encounter with a brand you don't see very often 😊. ことりAroma: A sweet, mature aroma with no gassy feeling. After the gentle acidity, there was a slight bitterness, followed by a mushroom-like taste, and then the umami spread to the palate. It was delicious with grilled fatty salmon kama.

Alcohol content 18%. ことりIt is completely different from the Junmai Ginjo Seha Mangetsu (hiyaoroshi) released in the fall, and the spring version is a blend of several different types of sake. It has a gentle ginjo aroma and a clean, slightly bitter taste, but it also has a delicious flavor and is easy to drink. The best thing about it is that I was surprised at its cost performance 😳.

Slightly effervescent 🫧Lasting refreshing acidity, light fruity taste, slight sweetness, and a hint of astringency, but easy to drink. The sake cup is probably better to use a ceramic one than a clear glass, as it does not look dirty.
Oh, my! I found a piece of wooden vat at the bottom of the bottle! Super precious! But I drank it before I knew it😳.

I visited a sake shop in search of active nigori sake and was told that this one, which is made using the traditional sake yeast, was recommended. We headed home with high expectations for our first sake with a hole in the bottle!
The fruity complexity of the aroma, along with the acidity and sweetness that burst in my mouth 🫧I was shocked at how delicious it was since I have spent most of my life without drinking sake except for life events 😳.
The second day...third day...and as the gas settled down, the sweetness gradually became more noticeable 🤔I was impressed by the changing taste and deliciousness of sake as the days went by 🥹.
