Banshu Aizan
It has the sweetness of rice, and is refreshing but has a core feeling. I like sweetness, and the aroma is perfect for me. I want to enjoy the taste rather than drinking it for a long time.
Kamoshiki Shuzo Packing Card Sake Series. Big fan.
Freshly squeezed summer sake. It is made with 80% Omachi and 13% alcohol. It is fresh and clear, just like the image of summer sake. We feel that the message from the brewers is to drink it well chilled. It's a summer sake that you can comfortably sip away.
Jyudai Nakadori Junmai Ginjo Banshu Yamadanishiki
Full bodied. Dark sweetness of heavy Yamada Nishiki, crisp and elegant. Excellent stability and a very thick core. Heavier than the Honmaru. I got to know the taste of deep sake.
Gentle and soft. Fruity and straightforward taste of rice. I would personally like to accept and taste everything as it is rather than changing with the food.
Kurotenbi. From the first day of slight foam, the second day becomes rounder and delicious again. The sweetness of the rice is soft and fluffy, and the bitterness lingers slowly in the mouth.
Polishing ratio 29% I'm excited to see what it tastes like. You can clearly feel the sweetness of the juiciness and the lingering bitterness. It has a rich taste that is worth drinking.
Acidity / Amino acidity 1.8/1.2
It has an elegant sweet aroma and a slight sourness. It has a juicy feeling like a grape. It is not heavy and should be drunk with care.
Rice polishing ratio 39%.
Freshness, clear sweetness, and a mellow aftertaste.
The taste is clear rather than complex. I learned the taste of chilled sake.
Rice polishing ratio 60%.
Rather than the purity of rice, it has a slightly refined aroma like perfume. It has a unique balance of sweetness and umami, and is not fluffy. I would buy it again, but...
From the fragrant melon to the delicate foam, it turns to bitterness and lingers. I think I was able to learn a little about the depth of flavor of unpasteurized beer.
It has the firm flavor and mellow aroma of Yamada Nishiki, with a crisp sweetness that is free of miscellaneous flavors. I learned that this is what a perfect taste is like.
