This is a sake from Miyagi Prefecture, selected in the same vein as the Hitakami. It was described as junmai dry, so I ordered it, expecting it to have a strong umami flavor. This sake was cloudy and smooth, with a little bit of umami and a hint of ginjo aroma from the back of the bottle. I paired it with sea bass, striped horse mackerel, and sea urchin, but it did not go well with them. I thought I had not found the right pairing, but when I took a bite of gari, its sweetness and spiciness paired perfectly and it was delicious. Finishing the evening with a glass of Kan Abe and gari would make for a perfect evening.

This sake was described on the menu of a sushi restaurant as "good with sushi and sashimi. The phrase "super dry" was written on the menu, so I ordered it, imagining it would have a strong flavor. It was a slightly cloudy sake with a fresh sake-like aroma that was not that strong. The slight umami component that lingered on my tongue when I sipped it gave me the impression that it was more of a mellow sake type of sake. When I had it with the recommended nigiri for lunch, it went well with white fish, salmon roe, and eggs. More essentially, it is a sake that goes well with soy sauce. The moderate umami component, clean taste, and acidity (lightness?) when drunk by itself make it a delicious sake to drink with these sushi. When served with these sushi, the moderate umami component, clean mouthfeel, and acidity (lightness?) when drunk on its own bring out the best and cancel out the worst, making for a good pairing. On the other hand, I felt the pairing was a little weak with red and fatty fish such as tuna and salmon. While not a universal sake, it is an attractive sake that attracts people when paired. If you are going to eat salmon roe on rice in Watari-machi, Miyagi Prefecture, I wanted to pair it with this sake.

A fragrant sake with a soft, wafting top-fragrance. The overtone aroma is also softly fragrant, as if carrying the scent of spring. The umami flavor spreads in the mouth, and the clean taste without any cloying flavors reminds us that the status of premium sake is unshakable. Normally, I would not be able to drink such premium sake, but I happened to win the lottery at Tokumaru Shoten, so I got it. This is a bottle that you should definitely try if you have the chance. I think it can be best enjoyed either by itself or as a food sake.

First visit to the corner bar attached next to Hasegawa Sake Shop? s BAR next to Hasegawa Sake Shop. The menu changes once a week according to the season. It may be a bit different to call it a kaku-uchi, but in the sense that it is a place to encounter new sake, it is a kaku-uchi itself. Sakuimpression-N is a sake with a fizzy, bubbly taste and a mellow flavor that hits the tongue hard. It goes perfectly with the first item, sardine cod roe, and with the second item, cream cheese. It tastes best as a sparkling aperitif. If you like mellow and flavorful sake, this is one you should definitely try.

A long-time hairdresser opened her own private salon, and I gave her sake as a gift to celebrate. Since she likes dry sake, I couldn't choose one myself, so I asked the staff at Hasegawa Sake Shop to select a sake that was dry and recommended for the celebration. I have had a bottle of Kuroryu at the Sake Cost Sake Brewery, and I personally thought it was refreshing but spicy, so I bought it thinking that she would like it.

I was so impressed with the new Otter 40.5% at the Hou Bar I visited the other day that I bought a bottle of the 20.3% from the online store. It still has the same lightness and flavor of the Otters, but it is lighter than the 40.5%. However, I felt it was a bit lacking, perhaps because I was corrected for memories, or perhaps because I have been enjoying some good sake recently. My impression is that it is recommended for those who want to have a good sake at the second place rather than at the first place.

A sake with a distinctive label called kafuda-shu, one of the brands of Kamo Nishiki Sake Brewery, a sake brewery in Kamo City, Niigata Prefecture. One of them is Kwangsuisen Junmai Daiginjo. One sip and the mellowness spreads in the mouth with a buzz, and the effervescence of the raw sake diffuses the flavor in the mouth. This is an exquisite product. The 50% rice polishing ratio Junmai Daiginjo has a certain aftertaste, so even among those who like mellow sake, some may find it a bit too much for those who like alsochrome sake. However, this is a gem that will make you say, "What the heck is this? This is a gem. Purchased at Hasegawa Sake Shop in Tokyo Station.

When opened, the sake had a slightly cloying taste with an image of mellow flavor rushing in. The second day after drinking, however, the oxidation process made the mundane taste disappear, and the mellow flavor transformed into a terribly delicious sake. It is a sake that should be tasted on the second day after opening!

Hou Bar, a bar specializing in sake, sponsored by Otters. Interesting system with 7 "moms" for 7 days of the week. It is a fun place to drink sake that you cannot normally drink. Now, the concept of Otters is to create an ancient sake as "the best of the hundred medicines" while keeping the goodness as a drink called the new Otters. In fact, we use a yeast called "otter exosome," which was discovered during the fermentation process of otters. When you drink it, a gusto of rich flavor envelops your tongue. Frankly speaking, it is scary delicious. Once again, I was reminded that I should not think of Otters as supermarket sake.

Sake meeting with senior sales staff at AKATSUKI NO KURA. We had a heated conversation about how to nurture a rich sense of inner values from now on. Next five is a collaboration of five different Akita sake breweries. Haruka" by the Kuribayashi Shuzo Brewery Shinmasa Shuzo Yuki no Bijin" Akita Shuzo YAMAMOTO" Yamamoto Shuzo Brewery ICHIHAKUSUISEI Fukurokuju Brewery Sake with a refreshing taste, easy to drink, and in line with recent trends. The bottles are so beautiful that it is hard to believe they are sake bottles. Sake that looks good.

This sake was introduced to us by the owner of Tokumaru Shoten in Kannai. This sake is made using a method called Fukuro-hozuri, in which the sake is squeezed by its own weight alone. This method is said to result in a clean and refreshing taste with little bitterness. When you actually drink it, you can feel the aroma of yeast in the refreshing taste, and after drinking it, you will feel crispy. It goes well with meat with strong flavor. On the other hand, it does not seem to go well with consommé-type umami, and I felt a bit of a strong sake taste. It is a sake that can be transformed by combining it with meals.
