This is a sake from Miyagi Prefecture, selected in the same vein as the Hitakami. It was described as junmai dry, so I ordered it, expecting it to have a strong umami flavor.
This sake was cloudy and smooth, with a little bit of umami and a hint of ginjo aroma from the back of the bottle.
I paired it with sea bass, striped horse mackerel, and sea urchin, but it did not go well with them. I thought I had not found the right pairing, but when I took a bite of gari, its sweetness and spiciness paired perfectly and it was delicious.
Finishing the evening with a glass of Kan Abe and gari would make for a perfect evening.
